📝INGREDIENTS
-1kg of beef
-cooking oil
-1 garlic clove
-tb of butter
-fresh thyme
-onion , carrots , celery, thyme , rosemary , bay leaves & garlic for your aromatics and gravy base. If you wanna add anymore stuff to that go ahead
-100-200ml of red wine
-flour
-500ml of beef stock

🔑POINTS
- patting it dry and letting it come to room temperature are key to better browning, more even cooking and the seasoning sticking better
-make sure your pan is well oiled and piping hot when you sear off those sides they only need 45-60 to get a good colour.
-if you don’t have a thermometer it’s not the end of the world but you’ll just have to really look after the time to make sure you definitely get your desired out come
-let it rest when cooked and slice thin as if you don’t your meat will have a bit more chew to it even if cook it medium rare and cut across the grain.
-if you’re cooking roast beef you might as well always to the aromatics for your gravy, doing your own is so much more flavourful and you seen how easy it is.

As always in my videos I just get ingredients that aren’t pricey and I always get them from Aldi/Lidil/Asda , Asian markets near me or Amazon.

📝INGREDIENTS

-Full head of Cauliflower
-40g of butter
-40g of flour
-400ml of milk
-30g of mozzarella
-50g of Red Leicester
-80g of cheddar cheese
-sprinkle of nutmeg
-1 clove of garlic
-1tsp of Dijon mustard
-breadcrumbs seasoned with some herbs
-optionally some spring onion

🔑POINTS
-really make sure you season it will and get some colour on that cauliflower when roasting , it will provide great flavour. You want charred edges , bubbly cheese and a crispy top.
-if you want that cheese pull ad a 3rd of your mozzarella into the sauce , 3 into the bowl when mixing and the then rest on top with the breadcrumbs.
-make sure you use all parts of the cauliflower besides the bottom , as they’ll all ad some different flavours and textures.
-don’t make your cheese sauce too watery as it won’t set well in the oven
