Hi All
Whilst in lockdown over the next few weeks i thought i would share some of my food recipes for you to try at home. All the recipes are easy to make and can be made for a family on a budget.
Chorizo and Pea Quiche (Serves 4 - 6)
Shortcrust Pastry
180g plain flour, plus extra for dusting
100g cold salted butter, cubed
1 free-range egg beaten
The Filling
3 free-range eggs
1/2 onion finely chopped
150g Chorizo, diced
50g frozen peas
250ml Crème Fraîche
200g (bag of ) Grated Mozzarella
freshly ground black pepper and salt to season
How to make
For the Pastry, put the flour, butter and a pinch of salt into a bowl and mix (rubbing) the ingredients together until they resemble bread crumb or if you have a food processor add all ingredients and blend until you have the consistency of bread crumbs. Add half of the beaten egg and continue to process. You only need enough egg to bring the mixture together
the same rule applies if making the pastry by hand.
With your hands, flatten the mixed pastry ball until it is about 2cm thick, wrap it in cling film and leave it in the fridge for at least half an hour.
Preheat the oven to the below temperatures:
180C
160C Fan assisted
Gas Mark 4
After 30 mins remove the pastry from the fridge and roll out to fit a 19cm high-sided Tart/Flan tin and cover the pastry in the tin with baking paper.
Fill the tin with baking beans and blind bake for 10-15 minutes. Remove the beans and baking paper for the last five minutes of baking for a golden-brown crust.
To make the filling, add the chorizo to the frying pan and cook over a low/medium for 5-6 minutes. Remove the chorizo next add the onions and gently cook in the chorizo oil for a further ten minutes
Next, whisk the three whole eggs in a medium-sized bowl. Add the cream, chorizo, onions and peas. Mix well and season with salt and freshly ground black pepper.
Pour the filling into the pastry base and return to the oven to bake for 30–40 minutes, or until the centre has set.
Serve with Salad.
If you have Yorkshire Pudding Tray why not try making small individual quiches. You would have to change your baking times to suit.
