Mussel season is back, so we've put together a proper North Wales dish for it, mussels steamed in Welsh cider with leeks and smoky bacon, ready in under 20 minutes. Full recipe now up on the website 👉 mermaid.fish

To make it, you've got two brilliant local options.

🌊 Conwy Mussels, wild and hand-raked from the Conwy estuary, the UK's last wild mussel bed and Protected Designation of Origin. Plump, meaty and full of flavour.

🪢 Menai Mussels, farmed on ropes in the Menai Strait, where strong currents and local algae give them a naturally sweet taste, and available more consistently year round.
