INGREDIENTS
240g drained cooked chickpeas-poured
1 red onion
1 courgettes
2 Peppers
Β½ Cauliflower
2tsp Garam Masala
2tsp cayenne pepper
Β½-1 tsp salt (to taste)
Β½ tsp pepper
2 tbsp olive oil
1Handful Pomegranate Seed
4 Pitta Breads
The Tzaziki-Blitzed & poured
1 Cucumber
1 Clove Garlic
1 Bunch Mint
1 Lemon
1Pot Yoghurt
DIRECTIONS
1. Preheat oven to 180Β°C/356Β°F.
2. Finely chop the courgettes, red onion and peppers into bite-size pieces. Break cauliflower up into little florets. Place on a baking tray. Pour in a tin of chickpeas with some of the starchy water.
3. Pour over a good glug of olive oil, add cayenne pepper, garam masala, a sprinkle of salt and pepper, and mix everything together. Place in oven for 30 minutes.
4. Tzatziki time. Pour a pot of yoghurt into a bowl. Add a small bunch of finely chopped mint, the juice of one lemon, and one grated cucumber. Grate in a clove of garlic, season well and mix it all together.
5. After 30 minutes, remove the vegetables from the oven, mix them about, and then place back in the oven for 15 more minutes.
6. Assembly time. Take a warm pitta. Load it with your spiced vegetables, tzatziki, pomegranate seeds, some more vegetables, more tzatziki, more pomegranate seeds, and TUCK IN! Enjoy! π
