A different kind of taco 🌿

Crisp, clean and colourful, plant-based, naturally gluten-free, and made for summer days.

Part of a seasonal menu I’ve been developing, often served as a canapé or light starter.
Best enjoyed al fresco, a cucumber & lime highball pairs beautifully, simple on the surface, layered underneath.

Clean flavours, real textures, no shortcuts.

I love making sushi like this, clean, balanced, and elegant.
Avocado, torched yellowtail, citrus gel, toasted sesame and a little chilli for a kick.

It’s one of those dishes that looks simple, but every detail counts, from how you cut the fish to how the rice feels when you roll it.

Light, fresh, and always a crowd-pleaser.
