Sugar spice fairy I decided to expand on my baking and cooking skills and voila I now have a page dedicated to it! Aim is to eat healthy and bake naughty!

I feel so blessed to be able to make my son’s birthday cake! After all a way to a persons heart is through food! My son is quite fussy with cake so I made him a 3 layer vanilla sponge cake filled with vanilla buttercream! Working with red buttercream is hard work firstly because it’s hard to get that colour (I used a whole tub of food colouring to get it this red!) and secondly it can leave a stain! Safe to say he loved this cake and I must say it was the most moist vanilla sponge i have ever made. The whole family enjoyed it!

Making this cake was a “hard pill to swallow”… it would have been my dads 76th Birthday and every year we would celebrate it with making a big pot of curry and sharing it with our extended family. Since my son was born one day after my dad’s birthday we would do a double celebration. This Christmas gone was a difficult one but I had to make my dad his last cake to celebrate with my baby boy, I didn’t get a chance to take lots of pics but here is the finished version… 5 layer eggless cake filled with strawberry compote and fresh cream finished off with buttercream on the outside.

Lemon cake with zesty cream cheese frosting! My first ever lemon cake, and to be “showcased” at the work bake off! Let’s hope it’s edible! The buttercream let me down, too many air bubbles formed to give it a smooth finish! Every bake is a new learning experience! Happy Sunday!

Baking mode on! It’s been forever since I last picked up a spatula and an apron! This weekend we had the pleasure of meeting good friends for a long overdue catch up, and what better way to spend it than to have a fun picnic filled with food, laughter and fun! Of course no picnic is complete without baked treats, so I found my inner baker and conjured up an old favourite for the adults… carrot cake! I decided to make this into a sheet cake as it’s easier to transport and to slice up when you are outdoors. The carrot cake was fluffy and moist, layered with a zesty Lemon and vanilla bean cream cheese frosting. I also whipped up a batch of incredibly moist Oreo’s cakes for the kids.
