Sugar spice fairy I decided to expand on my baking and cooking skills and voila I now have a page dedicated to it! Aim is to eat healthy and bake naughty!

It’s not often I get a chance to bake these days but when there’s a special occasion I will make time! Baking in the extreme heat the UK has just had is not the one! I opted for a simple three tiered vanilla sponge cake filled with an American vanilla buttercream frosting… yes the frosting layers were thick (to add hight!) and were certainly not for diabetics or heart patients consumption! I think next time I will add my signature strawberry compote to cut through the intense sweetness! And of course I had to add the cake p**n (forgot to capture it earlier) I didn’t realise how much I missed baking… Happy birthday to my big sister 💚

I feel so blessed to be able to make my son’s birthday cake! After all a way to a persons heart is through food! My son is quite fussy with cake so I made him a 3 layer vanilla sponge cake filled with vanilla buttercream! Working with red buttercream is hard work firstly because it’s hard to get that colour (I used a whole tub of food colouring to get it this red!) and secondly it can leave a stain! Safe to say he loved this cake and I must say it was the most moist vanilla sponge i have ever made. The whole family enjoyed it!

Making this cake was a “hard pill to swallow”… it would have been my dads 76th Birthday and every year we would celebrat...

Making this cake was a “hard pill to swallow”… it would have been my dads 76th Birthday and every year we would celebrate it with making a big pot of curry and sharing it with our extended family. Since my son was born one day after my dad’s birthday we would do a double celebration. This Christmas gone was a difficult one but I had to make my dad his last cake to celebrate with my baby boy, I didn’t get a chance to take lots of pics but here is the finished version… 5 layer eggless cake filled with strawberry compote and fresh cream finished off with buttercream on the outside.
