CHEESY GARLIC BREAD πŸ§„πŸž
[OONI ADVENTURES]

How to get away with making pizza when the Mrs has had enough...cheesy garlic bread (pizza) 😁😁.

This time I went for a pan style crust with parsley garlic butter, mozzarella and cheddar cheeses.

Recipe:

Dough
200g Plan flour
120g Warm water
5g Sugar
5g Salt
5g Olive oil
4g Yeast

Topping:
50g Softened butter
3 tbsp chopped fresh parsley
3+ Cloves garlic (minced)
Salt to taste
Olive oil

1. Throw all dough ingredients into a food processor and blitz for 1 minute.
2. Remove leave to rest for 10 minutes.
3. Fold into a tight ball and leave to rise for 1 hour.
4. Roll out dough into a 13-14 inch circle and place in greased pizza tray. Leave to rise for 20 minutes.
5. In a bowl, combine butter, garlic, parsley and salt.
6. Preheat oven to 250C with a baking stone if available (or in my case the ooni to a minimum of 300C)
7. Top the dough with garlic butter, grated cheese and a drizzle of olive oil.
8. Bake for 10 minutes on pizza stone or bottom of the oven (5 mins in the ooni for me)
9. Remove and slice into small squares (blasphemy I know πŸ˜…).
10. Enjoy :)

Notes:
- I removed the pizza from the tray during the last few minutes of baking and finished on the baking stone directly to add some more crispiness.
- Use flavoured olive oils to drizzle on top before baking for some fun experiments.
- Since all ovens are different, remove the pizza before the cheese bakes too dark.

Looking back at these tasty vegan chilli squid bites from . Crispy battered oyster mushrooms, with a spicy and savoury seasoning. So delicious and such a satisfying texture. Loved it!

FOCACCIA 🍞

Good morning! Here's a few angles of the bubbly and crispy focaccia I made the other day with leftover pizza dough. Topped with olive oil, garlic, salt and pepper. So simple and delicious.

Ingredients:

Dough:
300g Plain Flour
180g Water (cold)
6g Salt
6g Sugar
1-2g Instant yeast

Topping:
Extra virgin olive oil
Sea salt
Fresh black pepper
Garlic granules

Method:

-Add all the dough ingredients into a food processor and mix for approx 30 seconds.
- Dump the rough dough ball onto the counter, cover and leave to rest for 30 mins.
- Stretch and fold the dough ball till a smooth ball is formed.
- Place into a small greased baking tray/cake tin and flatten as much as possible (dough will spring back).
- Cover and refrigerate for 24 hours or up to 4 days (mine was 4 days, since it was originally meant for pizza πŸ˜…)
- If leaving for a few days, it can be gently pressed down every day to not proof out of the traym
- Remove and let it come up to room temperature for minimum 2 hours.
- Preheat oven at 250C (highest my oven goes.
- Top dough with salt, pepper, garlic and a plenty of olive oil.
- Dimple the dough evenly across.
- Bake for 10-15 minutes.
- Remove from tray and leave to cool on wire rack for 20 minutes.
- Slice and enjoy :)

Ooni adventures continue. This time my first proper attempt at neopolitan style pizzas last Friday night.

Pretty chuffed with the outcome. Fluffy crust, both chewy and crispy at the same time. And it only took us about 90 seconds in the oven!

Which one would be your choice?

- Classic Margherita
- Pepperoni with green chilli chutney

Dough specs
(63% Hydration, Caputo Manitoba 00, overnight poolish, 1 hour bulk ferment, left in fridge after balled up till 2 hours before use, 260g dough ball)

Loving this spicy vegan ramen yesterday from . Chewy udon noodles, warm vegetable broth and sweet and spicy soy 'ribs.'

We were really impressed with everything in this dish. The broth was tasty, with the perfect amount of spice. And the vegan 'ribs' were so good. Such a satisfying texture and flavour.

[ALMOND BUTTER CINNAMON SCROLL]

Popped into donuts the other day and what a treat! This cinnamon scroll was so fluffy, creamy and delicious. The almond butter filling was so good! An instant favourite, we're going back to get another one. Recommend you get one too πŸ˜‹.
