We’ve finally done it… morels 🤍
Morels are unlike the mushrooms we usually grow. They don’t grow on wood, but in soil, and they’re known for being particularly sensitive to their environment, which makes them difficult to get right.
Everything we’ve done until now has been indoors, in controlled conditions. Once a crop is finished, we turn the leftover substrate into compost, which we use to enrich the soil these morels have grown in. It’s a slower process, but one that feels right to us.
This has been a long time coming, with plenty of trial and error along the way. Seeing them come through properly now feels very rewarding.
The flavour is something else. Deep, nutty, earthy, with a rich, almost meaty depth.
We’ll have a small amount from tomorrow at Islington Farmers Market and Marylebone Farmers Market. They’ll be on the website shortly after.
