A chestnut and wild mushroom risotto on the corporate menu this month. Also available for individual orders this coming week.

Growing up at the farm we had access to wild mushrooms (I remember specifically boletus) and chestnuts. Every year we would harvest them and keep a part in jars for extra indulgence for our festive dinners.

Wild halibut sourced from my local fishmonger on the menu tomorrow. This fresh fish is served with a creamy celeriac puree, borlotti beans and sauteed cavolo nero. Finished with a very traditional beurre blanc sauce on the side.
