Today in the kitchen Aloo batao ( potatoe and Aubergine) with Raita, is made. Aubergine is baked in the oven with a drizzle of mustard oil and a lil masala before putting it in the tarka. Sweet potatoes replacing traditional potatoes and oven baked instead of frying. It's healthy and non oily. Unfiltered photos.

At Sukhmani's Tiffin Service all food is cooked using Rapeseed oil because it's very light. Not a fan of sunflower and vegetable oil in cooking.
