Not your nonna’s tiramisu😅
Kimchi juice + Mascarpone + Trust the process = Kimchi tiramisu for Valentine’s Day💋

Recipe:
• Step 1 - Mix 10 egg yolks (200g) with 220g sugar on bain-marie until the sugar has melted.
• Step 2 - Whip 550g of double cream with 1 teaspoon of kimchi bits leftover from the juice.
• Step 3 - Break apart 1kg of mascapone and fold it into the double cream mixture.
• Step 4 - Slowly incorporate the yolk and sugar mixture and be careful not to whisk too much.
• Step 5 - Heat 700ml of kimchi juice and 70g of sugar and let it cool.
• Step 6 - Soak lady fingers into the syrup and lay it smoothly on top of the tray then layer the cream mixture and layer the soaked lady fingers again, then cream on top again.
• Step 7 - Sprinkle kimchi powder with a seive.

Happy Co-founder Anniversary to us! A year of saying yes to each other, to kimchi, and to building something a little wild together 🥹✨

We expected a small get-together… and 92 of you showed up with love, hugs, and full hearts. Homemade makgeolli, kimchi dips, gimbap, mugwort tiramisu, and the best kind of chaos.

So grateful for this community that’s grown with us, fed with us, and believed in us from day one. Here’s to many more ferments, milestones, and nights like this 🫶🥬💥

Recipe:

• Step 1 - Preheat oven to 176 celcius
• Step 2 - Scoop out the jammy inside of two persimmons and blend them.
• Step 3 - Cream 113g of room temperature butter and 150g of sugar together.
• Step 4 - Beat two room temp eggs with 1/2 tsp of vanilla extract.
• Step 5 - Mix the butter sugar mixture with the eggs and vanilla extract mixture.
• Step 6 - Sift 150g of flour with 1/2 tsp of salt, 1 and 1/2 tsp of baking soda, and 1 tbsp of cinnamon.
• Step 7 - Mix the dry ingredients to the wet ingredients then pour the batter into the baking tray.
• Step 8 - Bake for 45 min.

Because the olives are already salted in brine, making the kimchi paste without any sodium works because it absorbs the sodium in the olives!👩🏻‍🔬
