This one’s personal... Meet the Maker: Oskar Bynke of Hermann J. Wiemer Vineyards 🍷🇺🇸

Dan caught up with Oskar at the w**ery in the Finger Lakes - on the exact spot where Dan proposed to his wife. And, many moons earlier, where Oskar gave Dan his first paid gig in w**e as a brand ambassador.

So this is less formal w**emaker interview, more two old friends catching up over a bottle. ❤️

has been making history in the Finger Lakes since the 1970s, when planting European grape varieties in the region was still considered a bit of a gamble. Today, Oskar and Fred Merwarth are continuing that legacy with biodynamic farming, their own vine nursery, a flock of sheep, a gaggle of geese and plenty of ideas for what’s next.

A Finger Lakes icon. 🍇🇺🇸 (If you’re a Riesling fan - this one’s for you)

Hermann J. Wiemer Vineyards was doing things differently long before it was fashionable. Hermann J. Wiemer Vineyard

The estate’s first vinifera vines were planted back in the 1970s, when plenty of people questioned whether European grape varieties could survive the Finger Lakes winters. Fast forward a few decades and those early plantings have helped lay the foundations for one of the region’s most important w**eries.

Today, the estate is certified biodynamic, with sheep and geese helping out with pest control, while its nursery propagates vines for growers across the region. And they’re still experimenting, planting new varieties and figuring out what comes next.

And yes, the w**es are pretty bloody good too. 🍷

Accidental winning pairing ✨

We made a quick snack of smoked mackerel on fresh buttery baguette and tried it with our Micace Pecorino. WOAH 🍋 it was like a fresh squeeze of lemon on top. Clean, zingy citrus with enough weight to balance the oily fish. Lipsmackingly good and far too easy to drink.

Sometimes the best pairings are the ones you stumble upon...
