A Tuscan classic that transforms day-old bread into a delicious, fresh salad. Hereโs how to make it ๐
1. Soak the Bread: Take 500g of day-old Tuscan bread, break it into chunks, and soak in water for 10-15 minutes.
2. Prepare the Veggies: Chop 2 ripe beef tomatoes, 1 small red Tropea onion (or red onion), and 1 stalk of celery. Add a handful of fresh basil leaves and mix everything in a large bowl.
3. Dress it Up: In a small bowl, combine 5-7 tbsp of extra virgin olive oil and 3-5 tbsp of red or white wine vinegar. Season with salt and pepper to taste.
4. Combine: Squeeze the soaked bread gently to remove excess water, then mix it with the veggies. Be careful not to break the bread too much - it should be moist but bouncy.
5. Finish & Serve: Taste and adjust the vinegar and oil if needed. Garnish with extra torn basil leaves and serve with a pinch of love!
