THIS™ Mushroom “Tofu” Ramen
Ingredients (Serves 2)
500ml ramen broth
1 block Extra Firm Mushroom "Tofu", diced
2 noodle nests
2 small pak choi, sliced in half
1 red chili, sliced
1 spring onion, sliced
1 carrot, peeled & cut into matchsticks
Olive oil
Method
STEP 1: Preheat a pan over a medium heat and add 1 tbsp of olive oil. Add the Extra Firm Mushroom "Tofu" and cook for 6-8 minutes, until golden brown.
STEP 2: Meanwhile, place the noodles in a bowl and cook as per packet instructions.
STEP 3: Heat the broth in a small saucepan and, while it’s warming, add the pak choi to poach for 2–3 minutes, until tender.
STEP 4: To assemble the ramen, divide the noodles between two bowls. Top with the Extra Firm Mushroom ""Tofu"" and pak choi, then ladle over the hot broth.
STEP 5: Garnish with the carrot, spring onion, and red chili.
