What I eat in a day - post surgery edition pt.2 🫡🥝🍳

This was around week 3 post-op and honestly… it feels SO nice to slowly have my appetite and energy coming back!!

So we are finally getting back into a bit of routine, eating proper meals again and most importantly… enjoying cooking 🫶

Breakfast was a very realistic and unaesthetic bowl of overnight chia oats with coconut kefir ( gifted), chopped dates & almonds, blueberries and kiwi AKA fibre maxing

Lunch was a butter bean puttanesca using a recipe with sourdough toast!!

Snack-wise I’ve been loving the raspberry bars (gifted) with a cup of tea - a great desk snack now that I’m back at work! Honestly returning to work has been really good for keeping my brain busy and feeling a bit more normal again

Dinner was a veggie-loaded fried rice with kimchi, eggs, loads of veg and pieces (previously gifted)

Honestly just being able to stand and cook properly again feels lovely 🥹

Still taking things slowly, still needing lots of rest, but definitely feeling more human again!!

What I eat in a day - post surgery edition!!

this was 2.5 weeks post op as before this my appetite was GONE / feeling sooooo nauseous 24/7 !! it’s been grim

But here’s a wieiad now that I’m feeling a lot better; keeping things fairly simple, focusing on whole foods & high fibre but still the occasional treat for my sanity….

Firstly and I’m clutching at straws when I say this, but one of (the very few) perks of being in recovery is really getting to SLOW down which has been nice for the brain. Having my breakfast outside !! and taking my time with it !! a very simple porridge with oat milk, grated apple & chopped up dates with a dash of cinnamon too! I didn’t drink coffee for 2 weeks and honestly didn’t miss it?? But we are getting back to routine slowly

Next, a simple and easy lunch of scrambled eggs on sourdough toast! literally my go to meal !! so simple, easy on the stomach and filling too!

The latest food supplement I’ve been introduced to is psyllium husk - great for your gut blah blah blah!!! I had some sprinkled on some plain yogurt with a sliced up kiwi 🥝 fibre maxing !!

A sunny Saturday in called for a BBQ - and I played it safe with some grilled veggies, halloumi and salad! Also had some crispy potatoes alongside this!

And dessert was candy kittens which I’ve never actually had before! This flavour was so good!!

April: a month of two halves 🍝➡️🛌

Started strong with some delish eats ofc! Finally ticked (new Soho location 📍) off my list… it’s worth the hype!! Along with some other strong spots !

plus the dreamiest foodie date with 🎀🤎 💌 vegan pub food at = 10/10, followed by an Easter cookie stop that was as cute as it was delicious!! From 🍪

Clematis blooming on the patio and bringing me SO much joy 🌸

Lots of lovely PR visits sprinkled in too (most are already posted!) + a very solid return to Hot Pot in Chinatown… post pending 👀 #

At-home bubble tea thanks to drinks - obsessed with how cute the packaging is!!💖🫧

Snuck in a wholesome York escape before everything paused - the perfect little staycation 🤍

Also treated myself to an “ultimate glow” facial with at (btw you get £85 in redeemable credit against their products after - deffo some girl maths at work here🤭)

Then… the slower half. Surgery, recovery, and a week that really challenged me mentally and physically! Still got a long way to go but taking each day by day!

Very grateful for every message, check-in, and bit of support - truly getting me through it 🤍

Finally getting over all the nausea from the meds now so focusing on getting rest whilst keeping myself entertained; Nintendo switch = game changer (ty to my cousin 🫶), reading and colouring!🫶

Turkish eggs 🥚 🍳🥣 aka my favourite brunch ever!!

using the best ingredients from - their Greek yog is so thick and tangy it makes for a perfect base!!

& for gorgeous rich golden eggs!!

Both kindly gifted from !!

deffo one to impress too and it’s minimal effort (once you’ve mastered the poached egg)

Ingredients (serve 1 - easy to multiple for more portions)
150g Greek yog (the thicker the better)
2-3 cloves of garlic, grated or crushed
1 tsp lemon zest, optional
1/2 tsp dried mint
2 eggs, poached (I do 3 mins each in a light rolling boil with a dash of vinegar)
1 tbsp salted butter
1 tsp smoked paprika
1 tsp dried sumac
1 tsp dried or fresh chilli
Fresh black pepper
Fresh herbs for garnish , I used parsley
Bread of choice, I used sun dried tomato sourdough from !!
