Ad. I absolutely love having friends round for an easy summer supper, and this menu of Herby Green Chicken Thighs with Smoky Courgette & Asparagus Giant Couscous Salad (and garlic bread!) is just my favourite thing to make. Make sure you save this recipe ❤️
It’s made so simple with because everything comes straight to your doorstep (as early as 5.30am, so my delivery usually comes pre-school run) and you can prep ahead of time and then just BBQ whilst the sun shines! Or the rain pours, in my case!

Serves 4
For the chicken:
8 boneless skinless chicken thighs
1 large bunch coriander
1 small bunch mint
2 garlic cloves
½ green chilli
½ lemon, juiced
2 heaped tbsp Greek yoghurt
2 tbsp olive oil
Salt
For the salad:
300g giant couscous
2 large courgettes, sliced into planks
1 bunch asparagus, ends trimmed
1 bunch spring onions
Handful of fresh mint, chopped
Handful of fresh coriander, chopped
150g feta, crumbled
Olive oil
Dressing:
3 tbsp lemon juice + a squeeze more
1½ tbsp sesame oil
1 tbsp fish sauce
2 tbsp extra virgin olive oil
1 tsp honey
1 small garlic clove, grated
For the garlic toast:
75g butter, salted or unsalted
4 garlic cloves, chopped or crushed
1 handful of chopped fresh parsley
3-4 slices of thick sourdough bread
Blitz the coriander, mint, garlic, chilli, lemon, yoghurt, olive oil and salt together until smooth. Pour ¾ over the chicken and marinate for at least 1 hour (overnight is even better). Save the remaining marinade for serving.
Mix the dressing together and save half for serving later.
Cook the giant couscous according to packet instructions. While warm, toss with half the dressing.
