STORY TIME 🌽 Let me introduce you to the cousin of Thai papaya salad: Sweet corn salad (Som Tum Khao Pod). Available for this week's Power Bowl.
It isn’t a traditional Isarn (Northeastern) dish. Some believed it was an adaptation created in the Central Thailand, possibly from a royal chef hundreds of years ago.
Fact: traditional sweet corn salad is VERY SWEET and mild compared to Isarn salads, usually balanced out with a rich, custardy salted egg. It’s an entry-level option for Thai salad flavours. Honestly? Back home, it wasn't my absolute favourite.
However, since moving to the UK, it’s become my ultimate go-to. Whenever I host friends and want to serve a vibrant, plant-based Thai salad, sweet corn salad is my absolute hero dish.
It’s packed with sweet corn, tomatoes, crunchy green beans, toasted peanuts, fresh chilli, and plenty of garlic. All tossed in fresh lime juice, salt, and just a touch of sugar to bring the flavours to life.
To take a step further, I’ve been experimenting with vegan salted egg yolk. Rather than making it a dense round yolk, I created a umami crumble. Think of it as an eggy vegan parmesan, adding depth, texture and more-ish richness.
