2.5 years ago we left a rum barrel aging in the Kulen Elephant Forest in Siem Reap, Cambodia, where we filmed our first episode of our Rum & Travel Adventure documentary with our RSS Members (you can watch it in our YouTube channel).

We came back to see what the jungle had done to it.

Transporting it in an old military jeep, cracking the seal, tasting it for the first time with the local team who helped guard it. Together with the Elephants.

A Cambodian rum shaped by time, climate, and a bit of adventure.

Should we bottle it? Or maybe one more year of aging?

Where should we go next?

Each ring marks a year.
Early wood in spring.
Late wood in autumn.

Expansion and contraction.
Soft and hard.

That contrast shapes the barrel.
And the barrel shapes the rum.

Time is the first ingredient.

Hey there Rare Spirits 🥃

Next to the Mekong river, celebrating with other Rare Spirits, had the opportunity to try this Peruvian Pisco. Its made from Quebranta, a Peruvian grape variety.

At first if I was blindfolded I would have thought its a tequila, or maybe like a Sake. It’s super smooth, felt like 30% abv although it’s 40%, has citrusy notes, and a touch of jasmine (maybe this is why i thought of Sake?).

We mixed it simply with ginger ale and fresh lime, called The Chilcano, a classic, refreshing Peruvian highball cocktail. Very nice for the warm Cambodian afternoon.

But my Chilean friend who was also at the party hated it, as Pisco is from Chile, you know.

Where’s Pisco from???

The doors now open to the University Diploma Program in Rum Science & Technology.

This is a Spanish “Diplomado”… por lo tanto, we shall continue this post en español.

Diplomado en Ciencia y Tecnología de las Bebidas Alcohólicas Destiladas: RON.

La 8va edición comienza este Lunes 29 de septiembre 2025, avalada por la (Universidad Central de Venezuela) y la .iberoamericanaronmeliers Asociación Iberoamericana de Ronmeliers, con el respaldo del Ron D.O.C. de Venezuela .

Este viaje se extiende por más de 144 horas académicas a lo largo de 3 meses, y se imparte completamente online, por lo que puedes unirte desde cualquier rincón del mundo. En ediciones anteriores hemos tenido Rare Spirits conectados desde las Américas, Europa y Asia. 🌍

No es un simple curso: es una iniciación profunda en la ciencia, la historia y el arte del ron. Desde materias primas y procesos de destilación, hasta la fisiología sensorial, el control de calidad, las catas y maridajes con chocolate, café y más. Todo guiado por Maestros Roneros y Destiladores que resguardan este legado.
