Let’s get into the festive spirit with some Spicy Apple and Walnut Muffins! 👩‍🍳

🍴 Ingredients:

2 cups self raising flour
1 cup caster sugar
1 tsp cinnamon
3/4 cup chopped walnuts
1/2 tsp mixed spice
1/4 tsp nutmeg
425g can unsweetened apples
1/4 cup Alfa One Rice Bran Oil
2 eggs beaten well
1 tsp lemon rind

🍴 Directions:

Preheat oven to 180ºC and lightly wipe some oil around a non-stick 12-piece muffin tray.

Sift the dry ingredients into a bowl.

Thoroughly mix the wet ingredients.

Toss the apple on top of the dry ingredients.

Fold the wet ingredients into the dry with a hand whisk.

Fold and lift the whisk through gently until roughly mixed.

Spoon into the muffin tray and bake for 20-25 minutes or until golden brown.

Remove when cooked and allow to cool on a wire rack.

Scrumptious Stir-fry Vegetables!

Ingredients:

1/4 cup Alfa One Rice Bran Oil
1 tbsp chopped fresh ginger
2 cloves garlic
750g prepared vegetables
1 tbsp soy sauce
1/4 cup cashew nuts (optional)

Directions:

👉Heat the Alfa One Rice Bran Oil in a wok or frying pan over a high heat.

👉Add ginger, garlic, spring onions and cook, stirring for about 30 seconds.

👉Stir in soy sauce and cashew nuts, season to taste and serve.
