One farm. One chef. 19 kilos.
Every year, Daterra Coffee Farm opens its Masterpiece Auction — the rarest micro-lots from the Brazilian estate, bid on by the world’s best specialty roasters.
This year, a 19-kilo nano-lot called Xodó — Brazilian for “darling” — went to Difference Coffee.
We took it somewhere no auction lot has gone before: the kitchen of Rafael Cagali, whose two-Michelin-starred Da Terra shares more than a name with the farm. Both mean “of the earth.” Both are Brazilian. Both obsess over provenance.
Together, we created a Restaurant Edition — a coffee profiled with the chef, for the chef’s own tables. From 2 July, Xodó is served exclusively at Da Terra, with a small allocation at differencecoffee.com
