MiSHKi came out of a desire to create something of my own; something that embodies my love for the cultures and cuisines of Eastern Europe, the Caucasus, Russia, Central Asia and the Balkans; my (somewhat intense) obsession with dumplings; and the freedom of my very personal style of cooking. It’s all about the playful freedom that makes me adapt traditional dishes and use flavours and ingredients
from the different countries I explore to create something new. Nostalgic purists and lovers of traditional recipes might find me too much of a heretic, but I believe in playing with flavours I bring back from my travels, and updating techniques to bring you *my take* on the comforting, surprising, colourful cuisines of the New East. Because I think dumplings are the most magical and comforting food ever, my menus will feature Russian pelmeni, Georgian khinkali, Ukrainian varenyky, Polish pierogi, Kazakh manty… the list will go on. I also really like creating menus with a few other dishes; some lighter, some occasionally veggie, vegan or gluten free, and whatever I fancy depending on the season and my latest country-crush. (I go through periods, as some of you may know, when I’m running around obsessing about, say, Azerbaijan or something.) Every pop-up might thus be somewhat different, with maybe one or two particularly beloved classics. And soon there will also be parties, collaborations, dumplings master-classes, exciting dinners and more.
