A proper father-and-daughter afternoon in the kitchen yesterday with my little four-year-old chef. ❤️
We made crispy chicken escalopes coated in brioche breadcrumbs with Parmesan, shallow fried until golden, served with roasted sweet potatoes, grilled sweetcorn, and a fresh salsa of tomatoes, red onion, garlic, olive oil, sherry vinegar, sea salt and black pepper. To finish, a generous dollop of Daylesford Dijon mustard.
It’s a brilliant way of getting good-quality protein into little ones. They think they’re having chicken nuggets, but they’re actually enjoying fresh chicken with a delicious homemade coating. We always serve it with cucumber, red peppers and roasted sweet potato too – colourful, tasty and packed with goodness.
The best part wasn’t the food though. It was watching her get stuck in. Dipping the chicken in flour, then egg, then the brioche and Parmesan crumbs, getting her hands messy and feeling proud that she’d helped make dinner. Kids are so much more excited to eat something they’ve helped create.
Cooking together isn’t just about making a meal – it’s about building confidence, creating memories and spending quality time together.
