Pumpkin alla vodka? 🤤🍝🎃 we’re here for it!

Ingredients:
½ pumpkin - cut into wedges
1 tbs butter
Salt
Pepper
Paprika
Garlic Powder
Olive oil
1 white onion - finely diced
3 garlic cloves
3 tbs tomato paste
¼ cup vodka
100ml double cream
Parmesan
Fresh basil
Chilli flakes
250g pasta shells

Method:
-Slice your pumpkin into wedges, drizzle with olive oil and season with salt, paprika and garlic powder.
-Bake at 200°C for 25 minutes, then flip and continue to bake for another 25 minutes.
-To a large saucepan add a tbs butter and a generous drizzle of olive oil.
-Sauté 1 finely chopped white onion and 3 garlic cloves.
-Add in your tomato paste and cook for 1 - 2 minutes, then add the vodka.
-Scoop out the flesh of the pumpkin, add to the tomato base, and mix well.
-Add your cream, salt and pepper and some pasta water to loosen it up.
-Grate in a generous amount of parmesan, then add your cooked pasta shells.
-Mix then serve with some fresh basil, a sprinkle more of parmesan and some chilli flakes.
