👩‍🏫 Lunch & Learn: yesterday I learned how to vibe code while serving tacos 🌮

Kate, founder of .ai hosted a Lunch & Learn session .kitchen on how to use AI to cost out recipes 🤯Mind-blowing stuff but even more mind-blowing that I was asked to feed everyone. (Lately that request comes up more than I expected) Since I don't have stock to sell right now, I said yes 😊

🇲🇽 Yesterday was Dia de la Bandera or Flag Day in Mexico🇲🇽Did you know our logo was inspired by the emblem on the flag, which itself is derived by an ancient Aztec legend. 

Huitzilopochtli was a god in the Aztec pantheon, worshipped for his power over sun and war. When the Aztecs were searching for a new homeland, Huitzilopochtli guided them to settle where they found an eagle perched on a cactus, eating a snake. 

The Aztecs saw that eagle in Tenochtitlan, and laid their roots. It’s now where Mexico City is located.

For Chili Maven, the eagle represents the ancient traditions that infuse Mexican culture. We continue to use artisan methods for our recipes, taking the slower route to perfection; not the processed route to mediocre.

Yes, crispy tacos do exist in Mexico! 🌮 The key difference? In Mexico, you make the taco first-fill it, fold it-then you crisp it up. What doesn’t exist are the pre-shaped crispy shells you see at Taco Bell 🔔 Traditionally they’re fried, but in this recipe you get that same irresistible crunch by crisping them in the oven.

🌶️ We seasoned the beef with our MILD & SMOKY salsa macha for deep, authentic flavour, then finished the tacos with a drizzle of SPICY & NUTTY for the perfect hit of heat 🔥

🇲🇽 I just got back from Mexico City and the first thing I did was make Calabaza (Courgette) Carpaccio at home.

Thinly-sliced calabaza, drizzled with a salsa macha vinaigrette, topped with toasted pumpkin seeds and a flurry of parmesan 🤤

I had this dish at two fabulous restaurants: .molino and .tepoztlan and couldn't resist adding a Chili Maven twist to it 🌶️

Day 1 - Mexican Gastronomy Course in Mexico City

Thanks to the Kettle Khoo Academy, I enrolled in a course to learn in depth about Mexican cuisine: its heritage, traditions and history. On my first day we learned techniques and used ingredients that the ancient Mexicans used: like nixtamalization and quelites, which are wild greens.

it was all very hands-on, with us recreating the recipes in the kitchen. I learned six recipes:

Tortillitas de Maiz Cacahuazintle con Quelites
Salsa Molcajetedeada de Quelites con pepita de guajes
Chee Sikil
Caldo de piedra (Rock Soup)
Mextlapique
Hidromiel
