This weekend, we baked enough choux for two stalls: Spitalfields and Marylebone Fayre. I was invited to do a stall in Marylebone but I was so reluctant to close our stall in Spitalfields for the weekend because I've never left Le Choux by itself and didn't want to leave our returning customers without choux!! We baked ridiculous amounts of choux, two all nighters and I thought the worry of leaving my sister .sarne to run everything would be too much. But she did a good job. Look at this picture of her looking amazing with our display. And thanks for the help too, you awesome chef/ cocktail guru/ sales rep- X feel blessed to have a circle of incredible people in my life. All week I have been thinking about the "courtesan au chocolat" from Mendls patisserie in the Grand Budapest hotel film. It's a friend who gave me the idea and one of the reasons which pushed me to start Le Choux. Still in the development phase, but this is the first go at Le Choux's Courtesan at Chocolat, with three choux, one filled with dark chocolate cremeux and others milk chocolate cremeux. Like an elaborated religieuse!

Today I feel like I'm the luckiest girl ever. Not only to meet Poppy this weekend at my stall but also to be hand brought a box of her stunning creations. Beautiful and intricate tarts with immaculate foncage, light mousses and outstanding taste combinations.
Coffee and cherry blossom,
Cucumber creme fraiche,
Elderflower and raspberry,
Buckwheat, olive oil and vanilla.
Trop heureuse aujourd'hui. Pâtissière londonienne ses créations de tartes impeccable. J'ai finalement rencontrer Poppy après des années de regarder son travail et elle m'a apporter cette belle boite aujourd'hui à mon stand.
Sureau et framboise,
Café et fleur de cerisier,
Concombre crème fraîche,
Sarrasin, huile d'olive et vanille.

This morning setting up the stall! we're bringing in a Strawberries and cream choux! Made with a vanilla mousseline, strawberry confit and mini fresh British strawberries. Love making patisseries that work with the seasons. Any summery suggestions very much welcome!;)
