After a long holiday I’m back home and happy to get my usual food.
•Rice with grated carrots, courgettes, and garlic, adding some nigella seeds when serving.
• A sofrito of spring onions, red peppers, garlic and tomatoes, with 70g grated tempeh and a 400g tin of black beans (drained), with tamari sauce, smoked sweet paprika, cumin, a bit of chilli, half small tin of sweet corn, and coriander leaves.
• Avocado with salt and lemon juice on top.
So good!
Do you miss your food when you are on holidays?

When on holidays visiting small towns in Andalusia, it is a blessing to have access to a kitchen, so you can get a proper vegan meal to compensate the lack of nice vegan food around. However, I don’t spend a lot of time in the kitchen because I’m on holidays! So I rely on supermarket food like tofu, seitan, prepared beans and lentils, frozen vegetables… so this pic has seitan from Aldi, sautéed with frozen onions and peppers, and some garlic and soy sauce; frozen breaded aubergine slices (from Coviran) ready to cook in the air fryer; some lettuce and tomatoes. And it was soo good!!!!

Quick meal: Easy mashed cauliflower and potatoes with pan fried chickpeas. I boiled a large cauliflower, 3 medium sweet potatoes, and a couple of medium-large white potatoes. When they are soft, they are ready to be drained and then mashed with olive oil, nutritional yeast, garlic powder, plain soy yoghurt, salt and pepper. The chickpeas are cooked and drained (or use some from a tin); sautéed with olive oil, smoked sweet paprika, rosemay, thyme, salt, pepper, garlic and spring onion, no more than five minutes. Drizzle with a bit of balsamic vinegar to serve, and some slices of radish with lemon juice, and baby plum tomatoes. Nice and easy.

and recipes: no waste here!
Soak 1 full/compact cup of raw cashews for 1 hour or more. If you are in a rush, use boiled water and wait just 15-20 minutes. Drain the water, put the cashews in a blender and mix with 1 cup of water. After having a thick cream, slowly add 3 more cups of water (or less if you want a very creamy milk). Then you need a nut bag or linen cloth to pass the mix through and get the liquid separated from the fibre. You have to be patient and apply some force with your hands. The paste that is left in the bag is enough to make two balls of vegan “ricotta”, adding 2 tsp of nutritional yeast, 4-5 drops of lemon juice, and a little bit of salt and garlic powder. You make a soft dough and then you can get two balls rolled in oregano or any dried herb you like.
That’s it! Everything delicious and nothing to waste.
This milk is so refreshing and creamy, I didn’t add any sweetener. And the ricotta balls are perfect!

Cauliflower rice is so versatile - this pic is one lunch that kept me full until dinner! The recipe is for 1 person.
➡️ Ingredients
150g cauliflower (grated, or the frozen bags that are already grated)
80g frozen edamame
63g asparagus (chopped)
2 garlic cloves (finely chopped)
3 tbsp sweetcorn (from a tin)
About 1/4 cup chopped red pepper
3 spring onions
1/4 tsp smoked paprika
A bit of ground turmeric and black pepper
1 tsp tamari sauce
Some coriander leaves on top
➡️ Method
In a pan, heat the rice, spring onions, garlic, peppers, and asparagus. Just add a tiny bit of water. Add spices and put the lid on, low heat. After 3 minutes start stirring and the tamari sauce and sweetcorn. If needed, add more water (just to keep stirring without effort and avoiding any sticking to the pan). Continue cooking and stirring for about 3 more minutes. Turn the heat off and leave it resting with the lid on for about 4 minutes. Now you can serve it with coriander leaves and enjoy your lunch!

Very easy and delicious meal. Maize (you can also eat it directly from the cob), rocket leaves with just lemon juice. 200g firm tofu (cubed) in a recipient, with chopped onions, and garlic, asparagus, tamari sauce, ground ginger, ground turmeric, black pepper, mixed herbs and smoked paprika, just a bit of olive oil. Combine well and cook in the air fryer at 200°C for 10 minutes, stirring occasionally.

Monster because it seems to me a beast showing its teeth. But it is a kind monster because it is based on plants - vegan - so, no animal exploitation involved.
Sourdough bread slices, salad leaves, cooked carrot slices, mustard, and thick tofu slices cooked in the air fryer (200°C, 12 min), which only have tamari sauce and garlic granules (not marinated, directly to the air fryer). Very simple, but soooo tasty!

A savoury pancake or a kind of not too thin tortilla, whatever the name it was just a last minute creation to use leftover mashed potatoes. Mixed with chickpea flour until getting a manageable consistency, then shaped and cooked like a tortilla, it was so delicious and fulfilling. On top: tofu ricotta, salad leaves and tomatoes.
➡️ For 1 of these “tortillas” I used 3 tbsp of mashed potatoes and 2 tbsp of chickpea flour.
It is quite good!
