Mexican Lentil soup!🥣
Lentils are one of the best plant-based protein sources best for making healthy and yummy dishes, its mushy texture adds to the perfectness of the soup recipe. Aside from being delicious, it is suitable for vegetarian, vegan, and gluten-free diets.
INGREDIENTS
1-2 tablespoons vegetable oil
1 white onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1.5 tablespoon cumin
1/4 teaspoon smoked paprika
1 teaspoon mixed herbs
2 cups tomatoes, pureed
2 cups green lentils, washed well
1 cube vegetable stock (or 1 tbsp fresh vegetable stock concentrate)
8 cups of hot water
Salt, to taste
Topping:
2 tbsp Sproutd SULFORAPHANE
bunch of fresh coriander
1/2 avocado, sliced
METHOD
1. In a pot, add onion, carrots and celery stalks once the oil is hot. Cook for a few minutes and add garlic, cumin, smoked paprika and mixed herbs and cook for a further few minutes.
2. Next, add the tomatoes and lentils.
3. Mix in the vegetable stock cube or fresh stock and add the 8 cups of hot water. Mix well and simmer the soup for about 40 minutes. Add salt to taste.
4. After cooking, serve the soup topped with Sproutd Powered Sulforaphane, fresh coriander and avocado.
