I'm Ruth, and I'm so glad you're here.
Food has been at the heart of my life for as long as I can remember. Growing up, my family moved around a lot, and it was mealtimes, more than any place we lived, that made wherever we were feel like home. My mum was a wonderful cook, and that love of feeding people stayed with me.
In 2009 I took the leap and enrolled at Leiths School of Food and Wine, graduating with distinction. Since then, Forkful Food has grown into something I'm really proud of: 15 years of professional cooking and catering, built almost entirely on word of mouth.
And now, the next chapter: small group cookery classes. Maximum 6 people. Relaxed, sociable, and packed with the tips and techniques I've picked up along the way.

Summer in a bowl. This green gazpacho is everything I want to be eating right now: fresh, vibrant, and ready in minutes. No cooking required (yes, really).

One of my golden rules when it comes to entertaining is that everything should be able to be made in advance and simply put together at the last minute. It makes hosting so much more enjoyable and so much less stressful. This gazpacho is a perfect example.

Dishes like this are exactly what we make in class: food that’s simple, seasonal, genuinely delicious, and designed to make your life easier. If you’ve ever wanted to cook with more confidence and less stress, come and join me.

As the family and I melted together over the weekend, we were all hungry-but-not-hungry, if you know what I mean. So what do you eat when the mercury in London hits 34C? I really love coming up with new canapé ideas. I recently went through all my canapé recipes and realised that over the years I have amassed over 500!

When I’m putting together menus or creating new canapés, I tend to start with the base, and build from there. Bases need to hold well - both in terms of not going soggy, and also not collapsing in an eater’s hand!

Over time, many of my clients have asked me to put on canapé lessons, and as part of my new Forkful Food Cookery Classes, I have done so! At my Canapé Masterclass, I will teach you how to make 9 different canapé bases. Once you’ve got these under your belt, you can let your imagination go wild coming up with your own creations!

My recent trip to Georgia 🇬🇪 took us on a day trip to the Kakheti wine region where we were shown traditional bread making. Another great example of the many culinary influences in Georgia, the tone oven originated from India’s better known tandoor.

I’m just back from a fabulous few days in Tbilisi, Georgia 🇬🇪. Every meal was a feast, and I couldn’t get enough of tasting everything Georgia’s famous cuisine had to offer. Situated in the Caucusus at the crossroads between the East and West on the Silk Road trading route, Georgia’s food is a fascinating fusion of culinary influences. A perfect example of this cross-pollination are khinkali, one of Georgia’s most popular dishes. Delicious dumplings filled with anything from meat, cheese, potatoes, mushrooms. The most famous (and yummy) are the soup dumplings filled with spiced meat and broth. Although much bigger than Chinese soup dumplings, the influence is clear. But which came first? 🐓 or 🥚? Khinkali or xiao long bao? Who cares. Both are delicious! We ate at Cafe Daphna and it was fab!

My demonstration-based lessons take place in my home kitchen in Wandsworth and are designed to give you fresh inspiration in the kitchen along with plenty of practical tips you can use at home.

Classes are small (maximum 6 people), friendly and informal. You’ll see a selection of seasonal dishes being prepared, pick up useful techniques along the way and enjoy tasting the food during the session – perhaps with a glass of wine or two.

Planning something with friends or looking for a different way to spend time together?

You can book one of my cookery lessons as a group and enjoy a relaxed and sociable few hours in the kitchen.

For group bookings, you can choose the type of class that suits you best – whether that’s Simple Suppers for fresh midweek inspiration or a Dinner Party class for something a little more special.

For a little more flexibility, you can also “create your own class” – choosing a date and time that suits you, along with the type of class and even the menu, depending on your preferences and any dietary requirements.

My classes take place in my home kitchen in Wandsworth and are demonstration-based, with plenty of opportunity to ask questions and pick up practical tips along the way.

Groups are small (maximum 6 people), which makes the sessions informal and friendly. You’ll get to enjoy tasting the food during the class – perhaps with a glass of wine or two – and you’ll leave with the recipes so you can recreate everything at home.

Group booking discounts are available depending on the size of your group.

Canapés are often the part of entertaining people worry about most.

What to make, how much to prepare, and how to get everything ready without spending the whole evening in the kitchen.

Over the years, I’ve made thousands of canapés for catering jobs, and I’ve learnt that the best ones are simple, full of flavour and, most importantly, prepared in advance.

I love taking familiar dishes and turning them into something small and elegant, or creating seasonal bites that feel just a little bit special.

I’m often asked about canapé lessons, so I’ll be running Canapé Masterclasses a few times throughout the year, where I’ll show you how to make a selection of beautiful canapés along with plenty of practical tips to help you host with confidence.

I’m hosting an Easter biscuit decorating workshop this Wednesday at Art Movement’s gallery in Battersea, if you fancy coming along.

We’ll be decorating biscuits with royal icing and creating some colourful Easter designs—all very achievable, even if you’ve never tried it before.

It’s a relaxed, friendly session. A chance to try something creative, learn a few techniques, and enjoy a glass of fizz while you’re at it.

Two time slots available:
4pm or 6pm for 1 ½ hours

Tickets are £20 and include all materials.

It will be a really enjoyable couple of hours doing something a bit different and creative.

Here’s little glimpse behind the scenes of one of my recent cookery lessons.

Before each class I spend time getting everything ready so everything runs smoothly – ingredients prepared, recipes organised and the kitchen set for a relaxed few hours of cooking and conversation.

My lessons are demonstration-based and intentionally small (maximum 6 people), which makes them informal and sociable and gives everyone plenty of opportunity to ask questions as we go along.

Guests get to enjoy tasting the dishes during the session – often with a glass of wine (or 2!) – and leave with the recipes so they can recreate everything at home.

It’s always such a pleasure to share these sessions and see people leave feeling more confident and inspired in the kitchen.

Join me on Wednesday 25 March for a relaxed and enjoyable biscuit decorating workshop at Art Movement’s beautiful gallery space in Battersea.

I’ll show you how to use royal icing to create colourful and striking designs on delicious biscuits – perfect for Easter.

It’s a lovely opportunity to try something creative, learn a new skill and enjoy a glass of fizz while taking in Art Movement’s current exhibition Between Tides by artist Claire Chandler.

Fancy getting creative with biscuits and icing this Easter?

I’m delighted to be hosting a special Easter biscuit decorating workshop at the beautiful new gallery space of in Battersea.

Join me on Wednesday 25 March for a fun and relaxed session where I’ll guide you through decorating delicious biscuits using royal icing to create colourful Easter designs.

During the workshop you’ll learn a range of decorating techniques including line icing, flood icing and “wet on wet” patterns such as polka dots, marbling and herringbone.

All materials are provided and your ticket also includes a glass of fizz while you enjoy Art Movement’s current exhibition “Between Tides” by artist Claire Chandler.

Morning and evening sessions are available.

This recipe encapsulates everything that I aim to bring you in the dishes I demonstrate in my “Simple Suppers” classes. Namely, it’s seriously tasty, very quick and easy to make, introduces a new technique (baked rice), is packed with healthy ingredients, and finally is endlessly adaptable.

This version uses basmatic rice, flavoured with Thai green curry paste and cooked in coconut milk. But you could easily play around with the flavours - replace the curry paste with harissa and cook the rice in a mix of passata and water. Same technique, differently delicious!

Any Vegetable Fritters

Fritters – packed with vegetables, flavoured with herbs or spices, enhanced with cheese and pan-fried until crispy – are a brilliant way to introduce more plants into your cooking.

They’re also incredibly versatile and a great way to reduce food waste, because you can make them with whatever you happen to have in the kitchen.

The basic formula for fritters is very simple:
Vegetables
Flavourings (herbs or spices)
Cheese
A binding agent (egg and flour)

Mix everything together, shape into patties and fry until crisp and golden.
Vegetables I particularly like to use include grated root vegetables such as carrots, parsnips, sweet potato, beetroot or butternut squash. Frozen vegetables like peas or sweetcorn also work beautifully.

Courgettes and potatoes are lovely too, but do remember to salt them, let them drain and squeeze out as much moisture as possible before using them.
When it comes to flavour combinations, the possibilities are endless.
Crumbly goat’s cheese or feta adds a lovely salty hit, while cheddar or mozzarella gives you that delicious melty texture.

You can also add aromats like garlic, spring onions or shallots, and plenty of herbs such as parsley, coriander, dill or mint. Spices like cumin, paprika or chilli work wonderfully too.

To bind everything together, I usually use egg and plain flour. Self-raising flour will give a lighter texture, and if you need a gluten-free option, gram flour (chickpea flour) works very well.

These are exactly the kinds of simple, practical techniques I demonstrate in my cookery lessons.
