Watching something slowly come together is the best part!

The process is where I feel most at home. Figuring things out, making small adjustments, fixing what does not quite work and trusting that it will all land in the end. The result is always satisfying, especially when you finally step back and see it finished, but that moment only feels good because of everything that came before it.

This was a custom gingerbread house created for the Atomico building in 2024. One of my favourite elements was figuring out how to light the exterior of the house so it actually glows, rather than just looking decorative. It adds depth, warmth and makes the structure feel lived in once the lights are on.

One of my favourite builds from last year was this gingerbread dolls-house which won me first place at Cake International in their gingerbread category.

I loved all the details I was able to create, it was so fun to make.

I would love to do a dolls-house again with even more detail.

A Play Plaza, that’s built entirely in gingerbread ✨

This piece was created for and is all about playful detail. From curved gingerbread walls and stained glass effects made with isomalt, to hand-crafted dice, dominoes and fully wired lighting so each room tells its own tiny story. Every element was designed to feel interactive, imaginative and full of character, right down to the expressions on the gingerbread figures.

I love this trend of taking a moment to celebrate those butterfly effect, turning points in our lives, which cause us to take a different path that we were heading to something totally exciting and new.

This moment came for me the year after I entered my first cake competition show. I didn’t do particularly well and left feeling deflated.
The next year came an email mentioning a gingerbread house competition. I had never made a gingerbread house, but I had always wanted to. I love architectural detail and design of buildings and I knew it would be so fun to create one.

So I went about creating a mini gingerbread bakery, and I won first place, there may have only ended up being 3 entries, but I was hooked.

Every year since then I have build more and more adventurous houses, learning all new techniques and added all the tiny details I can.

I am so proud of how far I have come, from my first gingerbread house and I can’t wait for next year and all the amazing projects waiting for me in the future.

It was a sad start to Chanukah this year, but I hope this sweet gingerbread menorah brings some joy!

I found these incredible candy cane looking candles in and I knew I needed a classic colourful house to go with them!
