Sunday was made for this. 🫐

Blueberry & Cardamom Scones — flaky, golden, bursting with juicy blueberries and finished with a cardamom icing drizzle. The kind of bake that turns a lazy Sunday into a proper occasion.

No fancy skills needed. NOMU MiniMakes All Purpose Dough & Batter Mix does the hard work. You just show up, put the kettle on, and take the credit. ☕

🫐 What you need:
Scones:

2 x 150g sachets NOMU MiniMakes All Purpose Dough & Batter Mix
80g unsalted butter, cold & cubed
⅓ cup white sugar
1 tsp ground cardamom (optional but do it)
100g fresh blueberries
⅓ cup (80ml) milk + extra for brushing
1 large egg
Demerara or brown sugar for sprinkling

Icing Drizzle:

⅓ cup icing sugar, sifted
1–2 tsp milk
Pinch of cardamom

👩‍🍳 How to make them:
1️⃣ Preheat oven to 200°C.
2️⃣ Rub cold butter into the dry mix until it looks like coarse breadcrumbs (or pulse in a food processor). Add cardamom, sugar and most of the blueberries — toss gently.
3️⃣ Whisk milk and egg together, fold into the mixture to form a scraggly dough. Turn out onto a floured surface, press together gently and shape into a flat disc about 2cm thick and 20cm wide.
4️⃣ Cut into 8 wedges, space out on a lined tray. Brush with milk, press a few reserved blueberries on top, sprinkle with brown sugar.
5️⃣ Bake 15–20 mins until golden. Cool, then drizzle with the icing.
6️⃣ Serve with blueberry jam and whipped cream. Sunday sorted. 🫐
💡 Tip: If it’s a warm day like it has been for the last month and your dough starts getting sticky, pop it on a lined tray and freeze for 30 mins before cutting — makes shaping much easier.

When the heatwave hits, you have two choices: suffer, or bake something so good you forget it’s melting outside. We chose chaos. 🍰🍫

Rich NOMU MiniMakes Chocolate Cake, poked full of runny Biscoff, topped with whipped Biscoff cream and crushed cookies. It goes in the fridge. It comes out perfect. Your kitchen becomes the most popular place on the street.

🛒 What you need:

Cake:
• 1 box NOMU MiniMakes Chocolate Cake Batter Mix
• 2 large eggs
• ⅓ cup (80ml) vegetable oil
• ½ cup (125ml) milk or buttermilk
• ¾ cup (200g) smooth Biscoff spread

Biscoff Cream:
• 2 tbsp smooth Biscoff spread
• ⅔ cup (160ml) whipping cream
• 2 tbsp icing sugar, sifted
• Crushed Biscoff cookies to decorate

👩‍🍳 How to make it:

1️⃣ Preheat oven to 160°C. Grease and line a 20cm square tin.

2️⃣ Whisk eggs until foamy, add oil and milk, then stir in the cake mix until smooth. Pour into tin and bake 25–30 mins. Cool completely.

3️⃣ Warm the ¾ cup Biscoff in the microwave until runny. Poke a 5x5 grid of holes into the cooled cake (wooden spoon handle works perfectly). Pour the Biscoff over, spreading it into every hole. Fridge for 15 mins to set.

4️⃣ For the cream: melt 2 tbsp Biscoff until runny, whip together with cream and icing sugar until thick. Dollop on top, ripple with a spoon, finish with crushed cookies.

5️⃣ Slice. Serve cold. Survive the heatwave. 🫠

💡 **Hot weather tip:** Swap the cream topping for Biscoff buttercream — whip 80g butter + 50g Biscoff spread, mix in 80g icing sugar and a splash of milk. Way more stable in the heat and still absolutely delicious.

🔖 Save this for the weekend. Trust us.
