If your honey has started to crystallise, don’t panic.

It’s completely natural.

In fact, crystallisation is often a sign that your honey is raw and minimally processed.

Unlike heavily processed honey, raw honey still contains natural sugars that can form crystals over time.

It doesn’t mean your honey has gone bad.

Simply place the jar in warm water and stir gently if you’d prefer a smoother texture.

Liquid or crystallised, it’s still the same honey.

There are some things that just belong in the kitchen. Bone broth is one of them.

Not because you need another thing to remember to take every day, because you can actually use it.

Both start with the same protein, but they’re processed differently.

Collagen peptides are hydrolysed, so they dissolve easily in hot or cold liquids without setting.

Gelatine is less processed and naturally gels as it cools, which is exactly what makes it perfect for homemade gummies, jellies and marshmallows.

Butter burns before your pan even gets hot enough to sear anything properly.

Ghee doesn’t. Because the milk solids and water are removed, it has a much higher smoke point than butter, so it can handle real heat without burning, smoking, or turning bitter.

That’s the actual reason chefs reach for it over butter when they’re searing, roasting or frying at high temp. Butter can’t keep up.

And because the milk solids are gone, it’s naturally lactose and casein free. Same rich, buttery flavour, without the part that can upset some stomachs.
