A day trip to Whitstable for the vitamin D re-up and good ol’ English seaside.

Living in London I almost forget I live an hours train from the seaside; Brighton, Whistable, Hastings, Margate .. take your pick.

Littered with seafood shacks, pints of lager and old fishing boats it’s a day trip that always hard resets my health when I most need it.

A dozen whitstable oysters, pint of lager and the beach can cure any cold - I feel awake and alive again 👌😂

Spicy Gochujang Udon & Smashed Cucumber 🍜🥒🌶️🍳

A super quick delicious midweek meal recipe I reach for when I’m in need of a pick me up, whether you’ve had a long day or want to impress! It comes together in less than 10 minutes.

Ingredients:
Soft Boiled Egg
Udon
Butter
Garlic
Shallot
Gochujang
Double Cream
Soy Sauce
Parmesan
Spring Onion

Cucumber:
Garlic
Chilli Powder
Soy Sauce
Sesame Oil
Sesame Seeds
Apple Cider Vinegar

Triple Garlic Scallops & Noodles 🍜🧄🌿🌶️

When I buy groceries for food prep for midweek meals I earn PayPal+ points ! It’s a win-win situation, and I earn even points by cooking at home.

Ingredients:
6 x Large Scallops
90g Glass Noodles, Dried Bundle Soaked for 20 Minutes
100ml Vegetable Oil
2 Spring Onion, Sliced into Thin Strips
Few Coriander Leaves, Plucked
6 Garlic Cloves, Minced
1 Red Chilli, Minced
Pinch of Salt
Pinch of Sugar
100ml Vegetable Oil

For the Sauce
6 Tbsp Light Soy Sauce
1 Tsp Oyster Sauce
1 1/2 Tsp White Sugar
1 Bird’s Eye Chilli, Sliced

Method:
Soak the glass noodles in a bowl of cold water for 20 minutes. Once soaked use scissors to cut into smaller strips, around 2 to 3 cuts should do.

Heat up the oil in a saucepan on medium-high. Add 1/3 of the garlic to the pan and cook for around 1 minute. Add another 1/3 of the garlic and cook for a further 45 seconds. Turn the heat off and transfer to a bowl. Add the final 1/3 of garlic, a pinch of salt and a pinch of sugar. Mix to combine.

Mix the ingredients for the sauce into a bowl. To each shell, add a small handful of glass noodles followed by a scallop. Spoon over 1 tsp of the sauce onto the scallop then follow with a generous spoonful of the garlic sauce. Repeat for all remaining scallops. Place the scallops on a plate and steam for 4-6 minutes. Remove and garnish with sliced spring onion and coriander.

Honey Soy Chicken Bao 🍯🐓🧄

The secret’s out! called and said ‘Yo Justin, hit us with your best’ .. say no more. My very own special Honey Soy Chicken Bao AND Grilled Beef & Ikura are on the menu from 12th March running until 12th April!!

Ginger marinated chicken thigh, deep fried and dunked in a honey garlic soy, placed in a fluffy bao with mayonnaise and spicy spring onion slaw.

*The Grilled Beef & Ikura Rice is not available at Shoreditch and Battersea (BAO’s noodle shops), but the Chicken BAO will be ready and waiting at all branches & delivery*
