Triple Garlic Scallops & Noodles 🍜🧄🌿🌶️

Ingredients:
6 x Large Scallops
90g Glass Noodles, Dried Bundle Soaked for 20 Minutes
100ml Vegetable Oil
2 Spring Onion, Sliced into Thin Strips
Few Coriander Leaves, Plucked
6 Garlic Cloves, Minced
1 Red Chilli, Minced
Pinch of Salt
Pinch of Sugar
100ml Vegetable Oil
For the Sauce
6 Tbsp Light Soy Sauce
1 Tsp Oyster Sauce
1 1/2 Tsp White Sugar
1 Bird’s Eye Chilli, Sliced
Method:
Soak the glass noodles in a bowl of cold water for 20 minutes. Once soaked use scissors to cut into smaller strips, around 2 to 3 cuts should do.
Heat up the oil in a saucepan on medium-high. Add 1/3 of the garlic to the pan and cook for around 1 minute. Add another 1/3 of the garlic and cook for a further 45 seconds. Turn the heat off and transfer to a bowl. Add the final 1/3 of garlic, a pinch of salt and a pinch of sugar. Mix to combine.
Mix the ingredients for the sauce into a bowl. To each shell, add a small handful of glass noodles followed by a scallop. Spoon over 1 tsp of the sauce onto the scallop then follow with a generous spoonful of the garlic sauce. Repeat for all remaining scallops. Place the scallops on a plate and steam for 4-6 minutes. Remove and garnish with sliced spring onion and coriander.
