We increase the nutritional value of our Spätzle by using a mixture of plain white flour and high wheat protein flour called kamut (khorasan). Kamut is an old ancient grain type which originated in the historical region in modern day Afghanistan, northeast Iran and parts of Central Asia.
Both our flours are organic and come from in the UK - so all within our sustainability values. 👍
Kamut is s an excellent source of protein, fiber, zinc, phosphorus, magnesium, vitamin B1 (thiamin), and vitamin B3 (niacin). It is also high in many minerals such as selenium, copper, manganese, and molybdenum.
For its nutritional qualities and digestibility, kamut is particularly suited for athletes, people with an active lifestyle, and generally anyone looking for high quality nutrition. 🤸♂️🤸♀️
The mix of both flours gives our Spätzle a bit more of a 'Biss' as we would say in Germany, so a bite, i.e. it stays firm for longer than normal pasta. 💋
