Seared Scallops & Black Pudding on Celeriac Rösti with Caviar Butter Sauce🔥

Chef Martin is back with a refined British starter, built on bold, balanced flavours.

Sweet celeriac rösti, rich black pudding, delicate scallops, and Serrano ham come together, finished with a luxurious caviar butter sauce for the perfect touch of indulgence.

🍽️ Full recipe below if you fancy recreating it.

▪️ Rösti:
Grate celeriac/parsnip, season, shape, and pan-fry until golden. Finish with butter until crisp and cooked through.

▪️ Black pudding:
Fry until crisp outside and soft in the middle.

▪️ Caviar butter sauce:
Reduce wine, vinegar, shallots, and tarragon, then whisk in butter and finish with caviar off the heat.

▪️ Scallops:
Sear in a hot pan for 1–2 minutes each side, finish with butter and lemon.

🍽️ To plate: rösti, black pudding, Serrano ham, scallop, apple, watercress, and sauce.
