Crispy, buttery, spicy and finished with a creamy Stilton cheese sauce. This is proper comfort food done right.

Buffalo Chicken with Blue Stilton Sauce
Prep & cook time: 20–25 mins
Serves 4

Ingredients
For the chicken wings:
500g chicken wings
200g cornflour
300ml buffalo sauce
Large k**b of unsalted butter

For the blue cheese sauce:
150g sour cream
150g 1912 Stilton, crumbled
Big pinch flaky sea salt
Pinch white pepper
Oil for frying

Method
1. Pat the chicken wings dry with paper towel. Toss in cornflour and shake off excess.
2. Fry wings in batches for 18-25 minutes as per air fryer recommendations (approx 180°C) until golden and crispy.
3. In a frying pan, warm the buffalo sauce over a medium heat. Add a k**b of butter and stir into the sauce until melted.
4. Toss the cooked wings straight into the sauce until fully coated.
5. Mix sour cream, 1912 Stilton, salt, and pepper to make the blue cheese sauce.
6. Serve the wings piled high and top with the blue cheese sauce.

🥑 Blend together:
Greek yoghurt, avocado, basil, dill, spring onion, garlic, lemon zest + juice, Stilton, seasoning + a splash of water
🥗 Mix:
With shredded chicken + red onion
🥬 Serve:
In lettuce cups + top with extra Stilton, lemon zest & dill

❤️ Date night, sorted.

This creamy sun-dried tomato & Stilton chicken is made for two - golden, crispy chicken simmered in a rich garlic, thyme & chilli cream sauce, finished with fresh basil and extra crumbled 1912 Stilton.

Cook it together, pour your drinks, tear the bread, and don’t forget to mop up every last bit of that dreamy blue sauce.

Who's staying in this weekend, due to this horrid rain? If anyone is looking for some easy cooking inspo why not try to make 1912 Golden Blue & Parsley Potato Croquettes- very delicious indeed!

Ingredients
• 600g cooked potatoes, mashed while hot
• 2–4 tbsp cassava flour (add until mash is firm)
• 100g 1912 Golden Blue cheese, crumbled
• 1 tbsp butter
• Salt & black pepper
• Small handful fresh parsley, finely chopped
• Coating:
• Plain flour (for dredging)
• 1–2 beaten eggs
• Breadcrumbs or panko
• Oil for pan-frying or shallow frying

Method
1. Make the mash base
1. While potatoes are still warm, mix in butter, salt, and pepper.
2. Add cassava flour 1 tbsp at a time until the mash becomes firm, non-sticky, and holds its shape when squeezed.
3. Stir in the Golden Blue and chopped parsley.
4. Taste and adjust seasoning.
5. Chill the mixture for at least 30–60 minutes to firm up further.

2. Shape
1. Scoop portions and roll into small logs or balls.
2. Place the shaped croquettes on a tray and refrigerate another 20–30 minutes, or freeze for 10 minutes to make coating easier.

3. Coat
Set up three shallow bowls:
1. Bowl 1: flour
2. Bowl 2: beaten eggs
3. Bowl 3: breadcrumbs

Then:
1. Roll each croquette in flour, shaking off excess.
2. Dip in egg.
3. Roll in breadcrumbs, pressing gently so they adhere.
4. Return to the fridge while you heat the oil (this helps prevent bursting).

4. Fry
1. Heat a thin layer of oil in a pan to 170–180°C (340–355°F).
2. Add croquettes and fry until deep golden and crisp, about 2–3 minutes per side.
3. Remove and place on a wire rack or kitchen paper for 1 minute before serving.
