Buffalo Chicken with Blue Stilton Sauce

Ingredients
For the chicken wings:
500g chicken wings
200g cornflour
300ml buffalo sauce
Large k**b of unsalted butter
For the blue cheese sauce:
150g sour cream
150g 1912 Stilton, crumbled
Big pinch flaky sea salt
Pinch white pepper
Oil for frying
Method
1. Pat the chicken wings dry with paper towel. Toss in cornflour and shake off excess.
2. Fry wings in batches for 18-25 minutes as per air fryer recommendations (approx 180°C) until golden and crispy.
3. In a frying pan, warm the buffalo sauce over a medium heat. Add a k**b of butter and stir into the sauce until melted.
4. Toss the cooked wings straight into the sauce until fully coated.
5. Mix sour cream, 1912 Stilton, salt, and pepper to make the blue cheese sauce.
6. Serve the wings piled high and top with the blue cheese sauce.
