The Green Goat Cafe Green Goat, led by chef Claire Jopling, is rooted in the vibrant market town of Machynlleth.

Over the past decade, Claire’s culinary journey has taken her from feeding production crews to crafting bespoke menus for major corporate clients such as Gordon Ramsay, Red Bull, National Geographic, Hyundai and Channel 4. Alongside this, she’s remained deeply connected to her community—supporting local initiatives, sharing her expertise, and hosting much‑loved takeaway nights from Goaty HQ. At Green Goat, the focus is simple: exceptional food made with organic, local and ethically sourced ingredients. Every item on the menu can be traced back to its source, and Claire’s dishes draw inspiration from both global flavours and classic British cooking.

My gallery reel tells me this was my haul 13 years ago. I really think my work/ life balance was better back then , I definitely had more time to forage!

I have a feeling the boletes and the chicken of the woods were foraged earlier in the September of 2013 somewhere between Machynlleth & Aberystwyth; with the remaining bounty found along Glyndŵr's Way.

Chicken of the Woods (Laetiporus Sulphureus) Chanterelle (Cantharellus Cubarius) , Cep (Boletus Edulis) , Hedgehog ( Hydnum Repandum) , Cauliflower Fungus (Sparassis Crispa).

Save the dates! The nights are drawing in and it is time to get cosy here at Goaty HQ with the 2nd installment of What’sup Goaty; a friends for dinner style supper club . In November the menu will be taking inspiration from South East Asian cuisine.

Well, I can't believe that it has been over a week since the first Goaty supper club! Two nights and two groups of fabulous folks sharing food, stories and laughter.

This signified much more than food; it has taken a long time to get to this point personally. The fact that the spots filled up before I even had the menu up is a sign of the trust that you have in me to deliver.

The relaxed atmosphere, the playfulness, and the warmth are all something that cannot be manufactured, so thanks for being amazing guests!

I seldom have time to stand back and feel proud of my capabilities, but these two nights were restorative and hopefully just the start of more exciting things to come.

Also a big thank you to Elijah; it was his gentle advice and observations this year that led to the supper club finally coming together and also for his help to keep things flowing on the night(s).

Planning for the next Goaty events are already in motion so watch this space ❤️

Last week was busy in the best way.
I headed up to The Lodge, Staylittle to cater for a large group, serving breakfast, lunch and dinner built around proper from‑scratch cooking: Shepherd’s Pie, maple‑roasted carrots, seasonal soup, homemade bread, crumble and more!

Work with a view and a genuinely lovely group of people to cater for .

I am looking forward to preparing a feast that is deeply connected to my roots recreated using produce and ingredients sourced locally.

Ala Nivithi is a mild Sri Lankan spinach and potato curry made using ingredients sourced from growers here in Powys & Ceredigion with the addition of fresh pandan, curry leaves & UK Grown Organic Flamingo Peas.

What a lovely way to round off Elijah's work experience with The Green Goat Cafe, catering for a lovely group of hen's . Serving up a hearty Italian feast , homecooked from scratch using a wealth of beautiful locally sourced ingredients .

Catering private dining still has to be one of my absolute favourites & it has been really special to have my son on board this week. Especially as I know this wasn't his first (or second choice 🤣) for work experience, he really has got stuck in with every aspect of running the business.

What a great workshop last Friday with Edible Mach people really got stuck in despite the heat, absolutely love it when everyone gets hands on .
