Anyone who’s been paying attention to English wine as of recent needs no introduction to . Stemming from Essex’s Crouch Valley, a patch only recently getting the recognition it deserves with higher ripeness levels than anywhere else in the UK, Gareth and Jimmy were early believers in the terroir and the wines they produce are testament to that conviction.

Their ethos is about as black and white as it comes, with a no BS approach and taking the stuffiness out of wine with a focus on quality and putting enjoyment and experience first and foremost with a complete disregard for the mainstream.

We’ve just added The Disobedient rosé to our collection of English still’s here at Ad Hoc - a pale, elegant, terroir-driven wine which is both restrained and yet screams confidence… available in store now, and we’ll be pouring it BTG from this Thursday 🏴󠁧󠁢󠁥󠁮󠁧󠁿

All levels of wine experience will be considered. Whether you’re new to the world of wine, or already a keen enthusiast, there will be the opportunity to learn and explore the spectrum through in-house wine training, as well as opportunities for WSET qualifications.

If you’re a hard-working, enthusiastic and dynamic individual who is great with people - you’re what we’re looking for.

RAMILO NATIVAS ROSÉ 🇵🇹

Ramilo have been the regional masters of Lisbon since 1895 - restoring the soul to the village of Colares, an all but forgotten wine region sitting on Lisbon’s Atlantic coast where they cultivate around 7 hectares of organically grown vineyards.

The family have restored growing estates, revived indigenous varieties and rejected modernity in favour of the ethos of their ancestors - to treat the land with respect and passion. Though previously relying on other Portuguese varietals to flesh out their wines, they now exclusively produce wines championing the native grape varieties that best express the cooler, Atlantic-influenced landscape.

One of the fruits of this newest chapter in the Ramilo story is the Nativas Rosé, crafted entirely from biodynamic Castelão clone ‘João de Santarém’ which is hand harvested, fermented in open vats without skins and then aged for 9 months in stainless steel.

An über vibrant rosé with generous and clean fruit, a lively acid line and the characteristic Lisboa salinity 🍓

Eastern Peake Vineyards ‘Coghills Creek’ & ‘Intrinsic’ Pinot Noir 🇦🇺

First established by his parents Norman and Dianne in 1983, 1999 was the first vintage of now head winemaker Owen Latta, after being thrown in the deep end by default at just 15 years old - setting the stage to pursue winemaking as his career path. Ever since, his untinkered winemaking philosophy has taken the reigns at what his parents first started and the fruits of his labour are truly something special…

The Intrinsic is sourced from the original MV6 vines - a Burgundian clone brought to Australia in the 1830’s - planted 40 years ago by his parents and offers a generous, brooding profile with deep savoury notes of amaro, forest floor and roasted mushroom.

In stark contrast the Coghills Creek cuvée acts as its bright and nervy sibling with youthful acidity, lifted and juicy cherries and berry fruit character, and a fantastic mineral cut to round things out.

Both rooted in the same volcanic loam soils at 430m of elevation but side by side the energy in the glass is remarkably different!

DOMAINE SYLVAIN PATAILLE: BOURGOGNE ALIGOTÉ CHARME AUX PRÊTRES, 2022

From pioneer of New-Wave Burgundy, Sylvain Pataille, the eccentric professor of Marsannay and leading proponent of the re-appraisal of Aligoté - the lesser planted white grape of the region.

This wine serves as an definitive example of the quite underrated varietal, often overshadowed by its larger sibling Chardonnay. Intense gold in colour, the nose is delicate and pure with aromas of white flowers and citrus. On the palate, the wine reveals its full complexity, dynamic, stimulating, and marked by a searing minerality. The finish lingers delicately, leaving a subtle touch of honey in the background.

DOMAINE DE FA BEAUJOLAIS-VILLAGES LEYNES-LES MAGNONS BLANC

Don’t be fooled by the label.. While Beaujolais is famed for its red counterpart, this 100% chardonnay expresses more of the tropes you would expect from a top rate white Burgundy.

Sourced from limestone-rich soils at the summit of the Côte de Besset slopes(a few metres from the Saint-Véran appellation boundary), this beautiful Beaujolais Blanc features a pale gold hue and an inviting aroma of stone fruit with floral highlights. A weighty palate, rich and creamy, offers flavours of ripe stone fruit, balanced by a refreshing acidity and subtle toasty nuances from oak aging. The finish is long and mineral-driven, with a pebble-dashed core adding complexity and elegance.
