When we first started distilling from our dining room table, we had one simple goal: to create a spirit that genuinely reflected the city we call home. 🐝✨

Fast forward to today, and while the stills have gotten bigger, our process hasn't changed. We’re still distilling and bottling right here in the heart of the city centre, checking every single batch.

This Father’s Day feels like a good moment to celebrate two very important men in my life.

Firstly Seb - Husband, co-founder of the business, dad to our little boy, and somehow still the person I most enjoy having a gin and tonic with 13 years after we first met over one.

And secondly my dad, Martin, who works behind the scenes and most people won’t necessarily know, but who has probably bottled more gin than almost anyone in the business over the years. He’s also our delivery driver, babysitter, fixer of problems, and generally the person who quietly helps keep everything moving.

This business has always been built by family, and today feels like a good reminder of that.

When we originally distilled 'Tied The Knot', it was a bespoke batch crafted to celebrate our own wedding day. We wanted a liquid that captured that exact moment—bright, floral, and deeply memorable.

With a beautiful burst of piney juniper on the nose, a soft wave of elderflower and hibiscus, and a creamy almond finish, it's it’s the kind of bottle made for raising a glass to good company and great celebrations. 🌸🍸

Next up in our '10 ways to drink Signature gin' is the iconic Bramble! 🍇

This is one of those cocktails that looks just as good as it tastes. It is the perfect balance of our bright, botanical gin and the deep, rich sweetness of blackberries. We love serving this one when we want something that feels a bit sophisticated but is secretly very simple to whip up at home.

The best part is definitely the finish. Drizzling the liqueur over the crushed ice creates that gorgeous "bleeding" effect that makes this drink a real showstopper! 🍹

Ready to give it a go? Here is what you will need...

The Ingredients:
🥃 50ml Signature gin
🥃 20ml Fresh Lemon Juice
🥃 10ml Sugar Syrup
🥃 10ml Creme de Mure

The Method:
Shake the gin, lemon juice, and sugar syrup in a cocktail shaker with ice, then fine strain it into a rocks glass filled with crushed ice. Gently, over the back of a spoon, drizzle the Creme de Mure over the top to create that "bleeding" effect. Garnish with a few fresh blackberries on a cocktail stick and enjoy!
