Fries
4 large potatoes (Russet potatoes recommended)
Cold water (for soaking)
Oil for frying (vegetable or canola)
Salt to taste

Cheese Sauce
2 tbsp butter
2 tbsp all-purpose flour
1 cup milk (warm)
1½ cups cheddar cheese (shredded)
½ tsp garlic powder
¼ tsp black pepper
Salt to taste

Toppings (Optional but Viral)
Crispy beef bacon or turkey bacon (chopped)
Chopped green onions
Jalapeños (fresh or pickled)
Sour cream or ranch dressing

👨‍🍳 INSTRUCTIONS
1️⃣ Prepare the Fries
Peel and cut potatoes into thick fries.
Soak in cold water for 30 minutes (important for extra crispiness).
Drain and pat dry completely.
Fry at 160°C / 320°F for 5–6 minutes (first fry).
Rest for 5 minutes.

Coating (Dry Mix)
2 cups all-purpose flour
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
½ tsp cayenne pepper (optional, for heat)
For Frying
Vegetable oil (enough for deep frying)

👨‍🍳 Instructions
1️⃣ Marinate the Chicken
In a large bowl, mix buttermilk, salt, pepper, paprika, and garlic powder.

1 liter air kelapa tua (wajib untuk rasa autentik)
200 ml minyak goreng

Gula merah secukupnya

🌶️ BUMBU HALUS (KUNCI WARNA HITAM)
20 siung bawang merah
10 siung bawang putih
15 cabai merah keriting
8 cabai rawit merah (opsional)
6 butir kemiri sangrai
6 cm jahe
6 cm lengkuas
5 cm kunyit bakar
3 cm kencur
2 sdt ketumbar sangrai
1 sdt jintan
½ sdt lada hitam
2 sdt terasi bakar

🌿 BUMBU UTUH
5 lembar daun jeruk
3 lembar daun salam
2 batang serai, memarkan

🔥 CARA MEMASAK
1️⃣ Menghilangkan Bau Amis Bebek
Lumuri bebek dengan jeruk nipis + garam
Diamkan 15 menit, bilas bersih
Rebus bebek 10 menit, buang air rebusan

2️⃣ Tumis Bumbu
Panaskan minyak agak banyak
Tumis bumbu halus sampai sangat matang dan harum
Masukkan daun jeruk, daun salam, dan serai

📝 Bahan Utama:

1 ekor ayam, potong 8–10 bagian
200 gram lengkuas, parut halus
2 lembar daun salam
2 batang serai, memarkan
500 ml air
Minyak goreng secukupnya

🧄Bumbu Halus:
6 siung bawang putih
5 siung bawang merah
1 sdt ketumbar
½ sdt kunyit bubuk / 2 cm kunyit
1 sdt garam
½ sdt gula
½ sdt kaldu bubuk (opsional)

🧑‍🍳Cara Membuat:

Rebus Ayam
Masukkan ayam ke wajan, tambahkan bumbu halus, lengkuas parut, daun salam, dan serai.
Tuang air hingga ayam terendam.

Masak Hingga Meresap
Masak dengan api sedang sampai air menyusut dan bumbu meresap sempurna ke ayam (±20 menit).

Goreng Ayam
Angkat ayam, goreng dalam minyak panas hingga kuning keemasan.
Goreng juga sisa lengkuas hingga kering dan renyah.

Sajikan
Tata ayam di piring, taburi lengkuas goreng di atasnya.
