Waste not want not …

This afternoon I mixed some slightly tired fresh beetroots with some young green outer leaves from a cauliflower, poured over an apple cider vinegar brine and the jar is now happily sitting in a warm, dark cupboard ready to start fermenting. Totally delicious in a couple of weeks - sweet, crunchy and sour - and excellent with all manner of cheeses, cold meats and other marvellous things. It will keep for ages in the fridge and is incredibly good for you too.

Dreaming of the Med part 2104 😁

Homemade chia seed sourdough - slathered with homemade hummus (topped with whole chickpeas, olive oil and sumac) and finished with a sliced tomato sprinkled with outstanding za’atar from shorkk (where I also get my sumac from)

Incredibly delicious, healthy and economical (especially when using dried chickpeas, which I think give a much better result anyway)
