As this season’s lambs are prepared for the table, it feels like a good time to look back at an important part of the New Farm Meats story.
For Daisy and Chris, producing good meat has never started at the butcher’s block. It begins out in the fields, with the breeding, feeding and daily care of the animals, knowing the stock and making sure their welfare comes first throughout their lives.
But the care doesn’t stop at the farm gate.
Butchery is another important part of that journey. Understanding the carcass, making the right cuts and using as much of the animal as possible takes knowledge and skill. It is part of respecting the animal and producing the quality of meat New Farm Meats has always wanted to put on its customers’ tables.
That is what field to fork really means to us. Knowing where your food has come from, how the animal was raised and the work that has gone into preparing it.
A lot happens before a cut of lamb reaches your plate.
