Here at Finest Cheshire Honey we onlly produce Finest Cheshire Honey. Some other Cheshire based Honey producers are guilty of bulking out their Cheshire Honey with honey from other parts of the U.K and imported from Non- E.U Countries. I know who some these producers are, as ive seen some of their deliverys in their yards in person in 200lt Drums ! Supermarket or Blended with Non E.U. Honey does NOT have all the Anticaterial Properties of Unadulterated Honey !

🐝🌼 HIMALAYAN BALSAM (Impatiens glandulifera) 🌼🐝

Himalayan Balsam lines the River Danes banks and produces frames full of nectar that our bees love. It's technically invasive, but it's become part of the character.

Native to the Himalayas, it was originally introduced to the UK as a garden plant, but quickly spread into the countryside and is common along watercourses. Himalayan balsam is a major concern because it outcompetes native plants, thanks to its exploding seedpods, which disperse seeds over a wide area and into water.

The bright pink/white flowers bloom in late summer, creating a spectacular splash of colour along the river and feeding our bees when other blossoms and flowers are fading.

Himalayan balsam nectar contributes to honey that's:

Honey may be the only food in the world with a literal forever shelf life.

Archaeologists excavating ancient Egyptian tombs have uncovered jars of honey sealed for over 3,000 years—and astonishingly, still perfectly edible.

This remarkable durability comes down to a mix of chemistry and biology: honey is low in water, high in sugar, and extremely acidic, creating an environment that destroys bacteria before they can survive. Bees add their own magic to the mix—through enzymes like glucose oxidase, they infuse honey with hydrogen peroxide, giving it not only longevity but natural antimicrobial power.

The preservation continues after the bees’ work is done. Processing and sealing honey helps prevent it from absorbing water from the air, a risk since its sugars are hygroscopic. While crystallization might occur over time, that change is cosmetic and reversible—it doesn’t mean the honey has spoiled. This alchemy of nature and science has also made honey a staple in ancient and modern medicine, with its thick consistency and antibacterial properties used to heal wounds for thousands of years. From tombs to trauma centers, honey remains a food—and a remedy—that defies time.
