Format Copy - Extra Pale Ale 4.3%

Elani is a relatively new hop to us here at Polly’s, but its purported lineage is one that we find fascinating - discovered wild, and believed to have descended from open pollination from hop plants left by 19th century miners and loggers, this special variety has some grit and teeth to it, which is laying the foundations on Format Copy - an Extra Pale Ale that couldn’t be more Polly’s if it tried.

Heavily influenced by a very early Polly’s XPA that set us into overdrive when we first brewed it, Format Copy is everything we love about hop-forward beer at a much more discernable ABV. Bringing bright and clean flavour notes of sweet orange zest, tangerine and white peach from the aforementioned Elani, we brought some partner hops to the party on this beer with further additions of NZ titan Motueka as well as Citra Lupomax to accentuate all those bold citrus notes.

Casual Afterlife - Oat Cream IPA 6.6%

We’ve said it before on these Oat Cream IPAs, it’s a very purposeful task designing the recipe for one - intentionally selecting hops that we know will accentuate the soft pillowy mouthfeel of one of these beers, and be that tropical pina colada kinda vibe we’re aiming for on them.

That said, you can always go nuts on those accentuating hops and create something that is an absolute tropical hop bomb of a beer. Casual Afterlife takes the concept of approaching things softly, and throws all our most tropical fruit-forward hops at the wall, seeing what sticks.

Dolcita, Krush, Strata and in-house favourite Mosaic are all singing from the rooftops on this beer that positively bursts at the seams with notes of peach rings, valencia orange, caramelized pineapple, bright guava and mango, with an underlying hum of thick, dank cannabis smoke. Incredible.

As Above, So Below - Double IPA 8.0%

As we’re transitioning out of the peak of summer into the more brisk evenings of late summer and early Autumn, so too are we moving out of the hyper focus on more sessionable beers to drink in the blistering sun and moving back toward the hype-driven beers that we can enjoy huddled in a group with mates, sharing a couple of cans and flavour profiles in a bustling taproom or bar.

As Above, So Below is a return to what Polly’s absolutely does best - wandering into DIPA territory and utilising the freshest, hype-forward hops we possibly can. Two varieties that have charmed the craft beer world in recent years in Nectaron and Strata buddy up with one of the most sought-after and reliable NZ hops in Nelson Sauvin, and an in-house Polly’s underrated favourite in Azacca for a brash, bratty Double IPA that drips with intense peach, passionfruit, pineapple, strawberry, and mango, with that unmistakeable underlying hum of dank cannabis smoke for some complexity

Bigger Petals - India Pale Ale 6.2%

It’s all well and good utilising a blend of those cornerstone hops that built our brewery up over the last eight and a half years; we’ll always have a love for the classics like Simcoe, Mosaic and Citra, but once in a while it’s way more fun to let the reins off and work with a load of newer hype-forward hops and see what a combination brings.

To say we’ve dialled up the hype on Bigger Petals would be an understatement. Nectaron for all those peach, strawberry and pineapple notes, before Strata bursts in with deep passionfruit, dragonfruit, and that signature underbelly of cannabis smoke, and lastly everyone’s new favourite hop here at Polly’s Luminosa brings candied oranges, peach-mango lemonade and papaya. Throwing all manner of sense out the window and just going for straight up juicy silliness on this beer, a delight for the senses.

Good Mood - Oat Cream Pale 5.5%

We’ve said it before, and we’ll say it again - when it comes to the Oat Cream beers that have really resonated with our brewing team and drinkers alike over the last twelve months, the trick to getting this style right is utilising the right hops to accentuate that creaminess and naturally pillowy nature of these incredible beers.

Good Mood is a continuation of this trend and we’re bringing the big guns on this pale ale. Hot side Mosaic sets a mellow but balancing undertone of pithy bitterness, before cold side additions of HBC-630, more Mosaic, and a sprinkling of Nelson do the business for an explosion of fruit-forward flavour, accentuated by hand-scraped vanilla to add a creaminess. Expect big notes of tangerine, cherry, raspberry, peach and sweet candied fruits in this all out banger of a pale ale.

Pineapple Krush - Pineapple IPA 6.0%

It’s a flavour profile that rides through almost all of our beers here at Polly’s - from the most seasoned craft beer nerds to the first time craft sampler, pineapple has always been a great identifier in the fruit forward nature of the hops we utilise in our beers.

Whilst we were writing our latest set of brew plans, we figured why not intentionally lean into that flavour profile and purposely use hops that present pineapple as a dominant flavour profile, and accentuate it with the wonderful Pineapple Abstrax from Skyfarm Hops, introduced to us by Beak during our birthday releases earlier in the year? The result is Pineapple Krush! - a bold but super crushable IPA hopped with Bru-1 and Krush, before that accentuating in brite with Abstrax. Expect fresh cut pineapple, pineapple cubes, pineapple? Pineapple.
