Tiny Turbo - Pale Ale 5.4%

We’ve always felt like Azacca gets a bit of an unfair rep - lost amongst a sea of hops that shout much louder and muscle their way to the forefront of people’s attention, this hop named for the Haitian god of agriculture has always found a beloved home here at Polly’s HQ.

With that in mind, we’ve treated this incredible variety to a hefty showcase on Tiny Turbo - going super gentle on the hot side, we’ve kept the good stuff for the expressive nature of our cold side hopping, and boy does this pale ale punch above its weight. With a heavy lashing of Azacca in both its T90 and CGX form, this beer bursts with bright notes of orange and mango, with more subtle notes of quince, gooseberry and kiwi, before an accentuating dose of everyone’s favourite hype hop Strata brings the bold passionfruit, strawberry and dank, resinous cannabis notes.

Moon Mountains - Pale Ale 5.7%

We’re all about the latest and newest hop technology landing here at Polly’s HQ whenever it breaks from our hop merchants. Prysma was first floated to us at the back end of 2025 and our brewers were positively giddy to utilise it on our beers - a liquid hop product developed over time by the wonderful Barth Haas to infuse intense and potent hop aroma and flavour without any of the harsh bitterness that can occasionally come from using such products.

Utilising the Citra variety of this liquid hop, this pale ale absolutely sings with fresh orange, pink grapefruit and lime notes, before a pellet addition of Australian in-house favourite Enigma brings white grape, raspberry and cantaloupe flavours, balanced with a very gentle addition of hot-side Citra BBC to impart a whisper of underlying bitterness for balance

Maple Deluxe - Breakfast Stout 7.0%

A stout at this time of year? You’re crazy, Polly’s! Don’t hate the player - any time of the year is a good time of the year for a big bold stout, and with our brew team yearning for a trip to the dark side we couldn’t help but indulge them when they wrote the recipe for Maple Deluxe.

A natural progression on our stout game after last year’s Just Like I Remember, this beer takes inspiration from the roadside diners on an old school US road trip. Seven specialty malts are at play on this beer, accentuated by an addition of our blend of coffee beans exclusive to our taproom, Polly’s Social. Not content to stop there, the brew team have added a hefty lashing of milk sugar and maple syrup to bring a pancakey gooeyness to proceedings.

Surrealistic - DDH Pale Ale 5.3%

We’ve always been big fans of a single hop showcase here at Polly’s, but showcasing those hops in just pellet form is so 2018. These days we’re leaning into the incredible working relationship we have with our hop suppliers and the hard work our head brewer Joe has been putting in to bring every bit of diversity available across a certain hop variety into a single hop beer.

Surrealistic, namechecked for how much we have to pinch ourselves that this little brewery in North Wales has come so far in eight years, brings four different types of a cornerstone hop in Citra to the party on a single beer. Cryo and Lupomax bring pelletised but ultra potent hop flavours, before liquid additions in Prysma and Dynaboost elevate those intense flavour compounds to the max. An absolutely insane amount of bright, punchy grapefruit, fresh orange, and muddled limes are dancing in tandem on this maxed out pale ale.

Glass Towers - Oatcream Pale 5.6%

When it comes to those incredible Oat Cream beers we’ve spent the last twelve months developing and advancing from our taproom to commercial release, it’s all about utilising the hop varieties that pair best with the soft, fluffy and sweet mouthfeel that sets the base of this rapidly growing arm to our brewing journey.

It’s safe to say Dolcita has firmly settled itself as a staff favourite here at Polly’s, and the peach rings, caramlised pineapple and creamy coconut notes are straight up built for use in an Oat Cream beer. Utilised in its Cryo, Lupomax and Prysma form, this beer is positively bursting at the seams with all those incredible flavour notes laid on top of a pillowy Polly’s pale ale.
