● sauté the onions, garlic and bacon in the butter
● add the wine, cream and seasoning and let it reduce
● lay the chicken in a baking dish, cover with mushrooms and herbs
● pour the sauce evenly over the chicken
● place in the oven at 180°C for 2hours, serve immediately
● 20 minutes before serving put the skins in the oven to crisp up

● thighs skinned, I used 12. One of the cheapest yet tastiest cuts usually sold in large packs
● cut into 1cm cubes, about half the amount of chicken. I used 'cooking bacon' basically off cuts and less than half the price/kilo than rashers or lardons
● same amount as bacon, roughly broken up. Most recipes call for button mushrooms but I used
ones, reduced in price as they were opening
● 2 large ones diced, not expensive shallots

I had trouble with the images, I couldn't access the photos or sequence a slide show. I really hate it when apps change their workings. over
