Sometimes people only see the finished potato.
They see the counter, the toppings, the photos and the videos.
What they don’t see are the early mornings, the late nights, the shopping runs, the chopping, the peeling, the mixing, the homemade coleslaw, the tuna prep, the slow-cooked fillings, the cleaning, the paperwork, the food safety checks, the stock ordering, the social media, and all the legal bits and pieces that go into running a business properly.
Over a year ago I started The Good Spud with nothing more than a belief that if you work hard, serve good food, and treat people well, good things can happen.
And honestly, that’s exactly what’s happened.
Every day I get to watch people enjoy food that I’ve put my heart and soul into. Families, workers on their lunch break, regular customers who have become friends, and new customers trying us for the first time.
That feeling never gets old.
I genuinely love this journey. I love building something from the ground up. I love learning. I love improving. I love seeing people leave with a smile on their face after having a good spud.
