Pork Belly
Cooked up a beautiful pork belly last night. 1.7 kg on the bone. Dried in the fridge overnight, then a teaspoon of olive oil rubbed on the skin and a liberal sprinkling of salt. 140c for 3 hours then cranked the oven up to 240 for 20 mins.
It was amazing and the crackling just perfect.
