Pork Belly

Cooked up a beautiful pork belly last night. 1.7 kg on the bone. Dried in the fridge overnight, then a teaspoon of olive oil rubbed on the skin and a liberal sprinkling of salt. 140c for 3 hours then cranked the oven up to 240 for 20 mins.

It was amazing and the crackling just perfect.

4 days before our new windows get fitted 🤦🏻‍♀️🤣

Got home from work the other day to find these wee guys had set up home on my window frame. I absolutely love the house martins. So this new window will wit untill they’ve moved out at the end of the summer.

It’s not only illegal to remove the swallow/house martins nest it’s also incredibly sad. They travel a long way to get here and mop up wasps and flies.

It’s a privilege having them here 😍

What a fabulous day on our first pop up shop.
2 pigs and we’re nearly out!!

We have plenty pork belly, 2 large shoulder joints, 1 gigot joint, 2 packs of loin steaks and pork cheeks left.

Sold out of sausages, burgers, mince and chops.
Clearly BBQ weather has had an effect.

If you’re planning to come over through the week message first to check what’s available. Although everyone is welcome to pop in for a cuppa.

Meet Mildred.

She’s the new lady about Shawwood. Mildred is a 3 yo OSB sow from Clifton Lodge Smallholding.

Mildred is a shy young lady that likes to walk her feed bowl after dinner 🤣

Her dinner bowl will be retrieved from the pig ark before breakfast 🙄

Remember those tiny wee cute piglets 🤔

They’re rather large now and digging a fair bit. So time to teach them all about electric fencing so they can go outside into the big bad world.

They’re down to 2 milk feeds a day now and will be weaned completely off the milk in the next day or so.

Teat perished but I couldn’t remove it to replace.

Quick visit to carrs to pick up another one, but they didn’t have any.

So mashed together this set up from a Hiko plate. A bit rough but works fine.

Only a few more days on the milk then these wee roasters will be getting weaned. Then I can make a more permanent solution.

She seems quite happy with her new accomodation 😃

Titch will move in with her once she weans her piglets in a couple of weeks.
