Our classic cinnamon buns are one of our customers’ favourites.

We choose to make them vegan, using an oil-enriched dough in place of butter. This creates a light, fluffy and soft texture. After an overnight cold prove, we laminate the dough with our fresh, house-made date and cinnamon paste. The dates bring a rich, natural toffee-like sweetness, while the cinnamon adds a warming spice.

And there’s more to come. We’re currently in the final stages of some exciting new product development, so keep your eyes peeled for updates later this month.

Calmness in craft

We’ve just finished our busiest month yet. Our craft has grounded us in the daily routine. The same method, the same techniques, just now at a bigger scale.

We could make it faster. We could mechanise it. That’s not what we’re about. Keeping the craft by hand is how you protect the knowledge and tradition behind it. And it’s also just how you get a better pastry. More room for skilled judgement, room to notice when something needs an extra minute or a lighter hand to get each product perfect. It tastes better, plain and simple.

Our very own spent the morning in the bakery with his camera, following the pastry team through their routine.

Earlier this month, some of our bakers, along with Rannoch, headed up to Dundee to meet our customers.

Three months ago, we expanded our daily deliveries to the north to seven days a week, and we’ve been blown away by the areas incredible food and hospitality culture. 

As bakers, we don’t often get the chance to step away from the bakery, so seeing our products on menus and counters was pretty special. 

We’ve put together this little film to share some of our day in Dundee and Fife. We hope it gives you a feel for the region’s warmth, creativity, and energy, and maybe even gives you a few recommendations for your next trip.

Take one of Scotland’s best beaches, an iconic rock and a beautiful castle. Add a brand new, custom designed and built stone mill and what do you get?

Introducing Tantallon Mill.

After years of planning and months of hard work we are delighted to announce our new flour mill at Auldhame Farm, Seacliff.

In many ways this is a return to where it all began. When we started the bakery in Edinburgh back in 2017, a small Austrian-built stone mill sat alongside our ovens and mixers, allowing us to mill organic Scottish grain for our bread. As we grew and began supplying increasing numbers of hospitality businesses, we quickly outgrew the small mill and the team stopped milling to concentrate on building the bakery. But we missed it, so it’s back - albeit in a much bigger way!

When up and running at full speed the new mill is going to be capable of processing up to 500 tonnes of wheat a year and we hope play our part in bringing Scottish farmers and the country’s growing community of amazing independent bakers closer together.

Massive thanks to the Scottish Government’s Food and Drink Processing Scheme for awarding us a grant for 40% of the project - now to get started!

Head east and spend a slower summer afternoon with us at our bakery in Musselburgh. Our sunny cafe is the perfect spot to settle in with a coffee, a freshly baked pastry, and enjoy a little breathing space away from the bustle of the city this August.

The sun is shining, the coffee is flowing and we’ve got a table waiting for you.

Nights in the bakery

Once the last customer leaves our cafe, the space transforms into a busy operational hub, where our night team gets to work.

Throughout the night, we bake, pack, prepare and deliver orders, making sure the freshest products are ready for breakfast.

And behind every crate that leaves our bakery is an incredible team of logistics assistants, managers, dispatchers, drivers and bakers who keep everything moving while most people are asleep. They say New York never sleeps but I think they meant Company Bakery!

Sorina, Max and Hannah jumped on their bikes this week to visit some of our customers and put together a little festival food guide. Every August, our hometown welcomes over a million visitors, making it our busiest month of the year. If you’re heading to the shows, here are a few of our favourite food stops around the festival:

School is back in session!

Last year, we started welcoming some very special visitors into the bakery as we launched our school visits programme. Children got the chance to go behind the scenes, learn where their food comes from, discover how bread is made and even roll their own croissants to take home.

We loved sharing what we do with the next generation of bakers, eaters and curious minds - so we’re doing it all again for the 2026/27 academic year.
