Musk’s are the Royal Warrant holders for sausages and are based in Newmarket, Suffolk. We have 133 years’ experience of making sausages – and it all started in Newmarket in 1884 using a ‘secret recipe’ with a special blend of spices which are still used today. This recipe remains a closely guarded secret– and Musk’s have held four Royal Warrants since 1907 and won numerous Great Taste Awards from

the Guild of Fine Food. In addition, the unique quality and flavour of our sausages has been recognised and rewarded with Protected Geographical Status (PGI). You can be 100% confident in the consistency of our sausages and the complete satisfaction of your guests. Musk’s were also the first company to make a gluten-free sausage which also won a Gold Great Taste Award. Ideal for those with a gluten intolerance, it retains the succulence and flavour of our original sausage. All Musk’s sausages are made to order and despatched same day for next day delivery, assuring the very best quality and a fresh product with excellent shelf life. We only use prime British pork shoulder meat from outdoor reared pigs and all our herds have full traceability to satisfy peace of mind in the supply chain. We use bread instead of rusk which gives our sausages a tender succulence for which they are famed, as well as only using natural casings giving them a perfect bite. canapé/cocktails to BBQ Jumbo 4s as well as our usual standard sizes). Our most popular line is our Newmarket sausage. We also have Pork & Aspalls Cyder, Pork & Leek, Gluten-free, Newmarket Chipolatas and our very popular seasonal line is our Christmas Chipolata, available from mid-November. each year. This Christmas Chipolata received the Gold award in the BPEX Foodservice Speciality Pork Sausage of the Year 2014 Competition! We produce breakfast and catering sausages too, so we really do have an item to suit every menu.

Boo! We have a spook-tacular recipe for you: our Halloween Sausage Rolls.

▫️ 12 Musks pork chipolatas
▫️ 160g puff pastry (½ of a sheet)
▫️ 1 teaspoon honey
▫️ ½ egg
▫️ 24 edible eyes

1. Lay out the pastry on a board.
2. Cut 12 strips from the shorter edge about 1 centimetre or half an inch wide.
3. Line a baking tray with parchment or silicon.
4. Wrap each chipolata in the pastry in a spiral pattern. Be sure to overlap the pastry at each end so that the pastry doesn't unravel.
5. Mix the egg with a tablespoon of water and use a pastry brush to glaze the Halloween sausage rolls.
6. Preheat the oven to 200 C / 400 F / 180 FAN / Gas 6 and bake for 25 to 30 minutes or until the pastry is golden.
7. Let the sausages rest for a few minutes on the oven tray.
8. Transfer to a serving plate and use some honey to stick the eyes on when they have cooled slightly. Serve with a condiment cobweb of ketchup & mustard.

Sausages, Crushed New Potatoes & Port Sauce

▫️ 2 packs of Musk’s sausages
▫️ 700g new potatoes, washed and halved
▫️ 200g of tenderstem broccoli
▫️ 2 medium shallots (approx 60g each), finely chopped
▫️ 150g butter
▫️ 2 tbsp fresh parsley, chopped
▫️ 1 small clove of garlic, finely chopped
▫️ 3-4 fresh sage leaves, coarsely chopped
▫️ 120ml port or Marsala wine
▫️ 150ml chicken stock

1. Preheat the grill to a high heat. Grill the sausages, turning occasionally, for 10-12 minutes or until cooked through.
2. Meanwhile, cook the new potatoes in lightly salted boiling water for 8-10 minutes, or until tender.
3. Once the sausages and potatoes are cooking, heat 25g butter in a small frying pan over a low heat and gently fry the shallot, garlic and sage for 4-5 minutes, or until soft. Turn up the heat and pour in the port. Simmer rapidly for 1-2 minutes, or until reduced by half, then add the chicken stock and simmer gently for 5 minutes.
4. Meanwhile, boil or steam the tenderstem broccoli for 3-4 minutes, or until tender.
5. Strain the sauce through a sieve into a clean saucepan and return to the heat. Gradually whisk in 25g butter, a little at a time, until the sauce is thick and glossy. Season to taste with salt and pepper.
6. Drain the new potatoes and lightly crush with a fork. Mix in 100g butter and parsley and season to taste with salt and pepper.
7. Serve the grilled sausages with the crushed new potatoes, tenderstem broccoli and port sauce.
