Sunshine in a jar 🔆 aka pineapple and turmeric sauerkraut.
This is one of my favourites, sadly won't have it at Caxton Market this weekend, as it matures a minimum of 3 weeks for optimum health benefits, but if you want try and make your own, the recipe is below 👇

Ingredients for a 1 liter jar:
800grams white cabbage chopped finely (saving a small lead for the end)
200grams pineapple diced small
1 tbs grated ginger
1 tsp turmeric powder
20grams sea salt/Himalayan salt etc
Crack of black pepper

Salt the cabbage, massage it until cabbage realises it's juices. Add the rest of the ingredients, mix well! Wear gloves if you would like, turmeric will make your skin orange.

Place it all in your 1 liter jar, cover with the leaf you saved. At this point you can use a weight to ensure all cabbage is under the brine. You can use fermentation weight, shot glass, cabbage core, plastic bag with some filtered water...place the lid on. Sit your jar in a vessel that can hold the escaping liquids. Wait at least 7 days, but ideal 3-4 weeks before moving your ferment to the fridge.

I just realised that I haven't posted here, the new baby has joined us end on January. We are all tired, but equally delighted 😀
I continue to be on a pause with this adventure, but will be back sooner rather than later 🤗
