Soften onion, capsicum and garlic, add a tin of tomatoes with paprika and cumin, simmer 10 mins.

Make wells, crack in 4 eggs, cover and cook until set.

Serve with crusty bread.

Wilt a handful of spinach in butter, add 3 whisked eggs, stir gently on low heat, and finish with grated cheddar.

Egg tip 🥚

Really fresh eggs can be tricky to peel when hard-boiled.

The fix?

Steam them instead of boiling.

Pop them in a steamer basket over boiling water for about 12 minutes, then straight into cold water.

The shells slip right off!

🥚 EGG TIP: For softer scrambled eggs, turn the heat down and take the pan off just before they look completely done. The warmth of the pan will finish cooking them.

A little reminder that our Eggs & Acorns Project is open to local schools! 🥚🌳

Our aim is to plant one oak tree for every 500 hens on the farm, helping children learn more about nature, sustainability and where their food comes from.

We’ve already planted more than 300 trees and we’d love even more local pupils to get involved in growing the next generation of oaks.
